Coho Salmon with Celeriac and Stone Ground Mustard

Ingredients

  • 12 oz pkg Coleson's Catch Coho Salmon
  • 1 cup celery root diced 
  • 4 strips Bacon
  • 2 Tbsp Butter
  • 1/2 c Onion diced
  • 1/4 c Chicken Broth
  • 2 Tbsp Whole Grain Mustard
  • Salt and Pepper

Instructions

  • Cook the Salmon any which way you want.
  • Cut the bacon into thin strips. Sauté until crisp; drain the grease on to a sheet pan.
  • Toss the celery root with salt and pepper and place on bacon greased sheet pan.
  • Roast until brown and tender at 375 degrees F. about 20 minutes.
  • Sauté the onions in the butter until they start to brown.
  • Add chicken broth and mustard; heat through and adjust seasonings.
  • Toss with celery root.

Notes

Serve Salmon with celery root mixture with side salad.

Coho Salmon Fillet with Asparagus

Ingredients

  • 1 pkg Coleson's Catch Coho Salmon
  • 1 handful Asparagus
  • 2/3 c Tomato diced
  • 1/2 c Onion diced
  • 1/2 lemon
  • 1/4 cup White Wine
  • 1/4 cup Chicken Broth
  • Salt and Pepper

Instructions

  • Put the broth and wine in a sauté pan.
  • Squeeze lemon into it and drop the rind into the liquid. Season with salt and pepper.
  • Add onion and bring to a boil.
  • Add salmon, asparagus and tomato and simmer covered for 4-5 minutes depending on how thick the salmon is.
  • Serve with a grain.

Mahi-Mahi with Spicy Peanut Sauce

Servings 2 People

Ingredients

  • 1 pkg Coleson’s Catch Mahi-Mahi Fillets
  • 3/4 c Chicken Stock
  • 1/2 c roasted salted peanuts finely chopped
  • 1/2 c Onion diced
  • 2 Tbsp catsup
  • 1/2 tsp crushed red chilies 
  • 1 Tbsp Cornstarch
  • Salt and Pepper to taste

Instructions

  • Cook Mahi-Mahi as desired and top with Spicy Peanut Sauce. 

Notes

Sauce preparation: In saucepan, simmer chicken stock, peanuts, onion, catsup, and red chilies for 10 minutes. Add cornstarch, blended with approximately 2 tbsp. cool water to thicken. Salt and pepper to taste.

Mahi-Mahi with Lemon Cucumber Cream

Servings 2 People

Ingredients

  • 12 oz pkg Coleson’s Catch Mahi-Mahi Fillets skin removed
  • 1 c Flour
  • 1/2 c Onion
  • 1 Tbsp Butter
  • 3/4 c Half and half
  • 1 tsp concentrated chicken stock available at the store in a bottle or you can make by using bouillon cubes and very little water
  • 1 Tbsp raw roux clarified butter mixed with flour
  • 1/2 c diced peeled and seeded cucumber
  • 1 tsp Lemon Zest
  • 1 Tbsp chopped parsley

Instructions

  • Sauté the onion in the oil.
  • Add the half and half and chicken stock.
  • Bring to a boil and add roux.
  • Whisk over medium heat until thickened and smooth.
  • Add the cucumber, lemon and parsley and return to a boil.
  • Sprinkle both sides of the Mahi-Mahi and dust with flour.
  • Sauté in butter to a golden brown and top with sauce.

Mahi-Mahi with Asparagus, Bell Peppers and Dill

Servings 4 People

Ingredients

  • 2 pkg Coleson's Catch Mahi-Mahi thawed
  • 1 cup Red and Yellow Bell Pepper diced
  • 1/2 cup Onion diced 
  • 1 cup Asparagus sliced
  • 1/2 cup Fresh Dill chopped
  • 1/2 cup Chicken Broth
  • 1/2 cup Butter
  • Salt and Pepper to taste

Instructions

  • Cook the Mahi-Mahi any style (pan fry, baked, broiled).
  • Sauté the bell pepper and onion until tender.
  • Add the chicken broth, dill and asparagus and bring to a boil.
  • When the asparagus is tender add the butter; when the butter is melted it is done.

Notes

One way to cook the Mahi-Mahi is to add it to the sauce and simmer until cooked. This adds extra flavor to the fish.
