Imitation Crab - Salad Chunks

  • 12 oz pkg Coleson's Catch Imitation Crab Meat
  • 4 c cooked Lo Mein noodles
  • 2 c Combination of Vegetables (scallion bell pepper, carrot, celery, bamboo shoots, water chestnuts), julienned
  • 1/4 c Soy Sauce
  • 1 tsp Sesame Oil
  • 1 tsp garlic chopped 
  • 1 tsp Fresh Ginger grated 
  • 1/2 c peanut or corn oil
  • 1/2 c Peanuts chopped

  • 12 oz pkg Coleson's Catch Imitation Crab Meat
  • 4 c cooked Lo Mein noodles

  • 1 tsp garlic chopped

Imitation Crab - Salad Chunks
Instructions
  1. Make the dressing with the soy sauce, sesame oil, ginger, and garlic; toss in all the ingredients. Chill.

Can be served in 1 hour or the next day.

  • Marinade:
  • 1/4 c Lemon Juice
  • 1/4 c pomegranate juice
  • 1/4 tsp Salt and Pepper
  • 1/2 c Red Onion diced
  • 1/4 c water
  • 1/4 c Basil chopped

  • 12 oz Coleson’s Catch Tuna Steaks
  • Marinade:
  • 1/4 c Lemon Juice
  • 1/4 c pomegranate juice
  • 1/4 tsp Salt and Pepper
  • 1/2 c Red Onion diced
  • 1/4 c water
  • 1/4 c Basil chopped
Instructions
  1. Thinly slice the tuna and marinate for 24 hours.
  2. Garnish with pomegranate kernels when in season.
  3. Chopped apple and or oranges would be good additional ingredients.

I like it with crumbled blue cheese and sweet baguette.

  • 2 Tbsp grapefruit zest grated
  • 1/2 c Red Onions diced
  • 1/4 c Mint chopped
  • 1/4 tsp Salt and Pepper

  • Marinade:
  • 1/2. c Fresh grapefruit juice
  • 1/4 c Lemon Juice
  • 2 Tbsp grapefruit zest grated
  • 1/2 c Red Onions diced
  • 1/4 c Mint chopped
  • 1/4 tsp Salt and Pepper
Instructions
  1. Thinly slice the flounder into strips and marinate for 24 hours.

Garnish with pink grapefruit sections.

  1. Mix all ingredients and chill overnight.

  • 3 Tomatoes
  • 1 Tbsp Basil chopped
  • 1/4 c white wine vinegar
  • 1/2 c olive oil
  • 1 tsp garlic chopped
  • Salt and Pepper

  • 6 cups Eggplant diced peeled
  • 3 Tomatoes
  • 1 Tbsp Basil chopped
  • 1/4 c white wine vinegar
  • 1/2 c olive oil
  • 1 tsp garlic chopped
  • Salt and Pepper
Instructions
  1. Mix all ingredients except eggplant in a blender or food processor.
  2. Blanch the eggplant in salted water until tender.
  3. Drain well and toss with dressing and chill.
