  • 12 oz pkg Coleson's Catch Imitation Crab Meat
  • 4 c cooked Lo Mein noodles
  • 2 c Combination of Vegetables (scallion bell pepper, carrot, celery, bamboo shoots, water chestnuts), julienned
  • 1/4 c Soy Sauce
  • 1 tsp Sesame Oil
  • 1 tsp garlic chopped 
  • 1 tsp Fresh Ginger grated 
  • 1/2 c peanut or corn oil
  • 1/2 c Peanuts chopped

Imitation Crab - Salad Chunks
Instructions
  1. Make the dressing with the soy sauce, sesame oil, ginger, and garlic; toss in all the ingredients. Chill.

Can be served in 1 hour or the next day.

Instructions
  1. Boil the onion in the seasoned chicken broth, add the rinsed spelt, and simmer until tender.
  2. My experience with cooking times varies wildly. The first couple of times you cook it, leave plenty of time in case it takes longer.
Recipe Notes

Spelt is not delicate like some types of rice--stir it all you want. I add the extras near the end of the cooking time to cut down on sticking.

Instructions
  1. Mix ingredients.
  2. You can make it into a roll in wax paper and chill or just put it into a container and spoon or cut out when needed.
Recipe Notes

The idea behind these butters is to bring out the best in whatever you are putting it on. If you have an oily fish like salmon, you want a tart butter so it isn't too rich. To make the butter tart you can use any citrus, wine or vinegar. A good combination for salmon is dill, shallots, wine or lemon. A good combination for steak is tarragon, red wine, shallots and black pepper. Swordfish might like garlic, basil and chipotle.

  • 2 tsp baking soda
  • 1/2 tsp Salt
  • 1 tsp Cinnamon
  • 1 tsp Nutmeg
  • 4 eggs
  • 2/3 c water
  • 1 c. Oil
  • 2 c. pureed pumpkin

  • 1 tsp Cinnamon

Instructions
  1. Put the sugar, flour, soda, salt and the spices in a large bowl, put a well in the middle and add the eggs, water and oil. Mix.
  2. Fold in the pumpkin.
  3. Grease 3 loaf pans well or line with wax paper.
  4. Bake at 350° for 1 hour.

Pureed pumpkin, ripe banana or persimmon can be used as the base for this bread.

  • 1/4 c Basil chopped

  • Marinade:
  • 1/4 c Lemon Juice
  • 1/4 c pomegranate juice
  • 1/4 tsp Salt and Pepper
  • 1/2 c Red Onion diced
  • 1/4 c water
  • 1/4 c Basil chopped
Instructions
  1. Thinly slice the tuna and marinate for 24 hours.
  2. Garnish with pomegranate kernels when in season.
  3. Chopped apple and or oranges would be good additional ingredients.
Recipe Notes

I like it with crumbled blue cheese and sweet baguette.
