Coho Salmon Fillet with Asparagus

Ingredients

  • 1 pkg Coleson's Catch Coho Salmon
  • 1 handful Asparagus
  • 2/3 c Tomato diced
  • 1/2 c Onion diced
  • 1/2 lemon
  • 1/4 cup White Wine
  • 1/4 cup Chicken Broth
  • Salt and Pepper

Instructions

  • Put the broth and wine in a sauté pan.
  • Squeeze lemon into it and drop the rind into the liquid. Season with salt and pepper.
  • Add onion and bring to a boil.
  • Add salmon, asparagus and tomato and simmer covered for 4-5 minutes depending on how thick the salmon is.
  • Serve with a grain.

Salmon Fillet with Tangerine and Pomegranate

Ingredients

  • 12 oz pkg Coleson’s Catch Salmon Fillet
  • 3/4 c Tangerine segments
  • 1 tsp Tangerine zest
  • 1/2 c Pomegranate Seeds
  • 1 1/4 c Red Onion diced
  • 1/2 c White Wine
  • 1/2 c Chicken Broth
  • 1 Tbsp Mint chopped
  • Salt and Pepper

Instructions

  • Simmer onions in the wine until the wine is almost gone.
  • Add chicken broth, bring to a boil.
  • Add the salmon and simmer covered until the salmon is half done, 3 minutes or so.
  • Add the other ingredients and cover for another 3 minutes.
  • If it seems dry add more broth.
  • Adjust seasonings.

Notes

Serving Suggestions: Rice, bulgur, salad or fresh vegetable such as broccoli.

Mahi-Mahi with Quince

Servings 2 People

Ingredients

  • 12 oz pkg pkg Coleson's Catch Mahi-Mahi Fillets
  • 1 c Quince seeded, sliced & peeled
  • 1/4 c Shallots minced
  • 2 Tbsp Butter
  • 1/4 c White Wine
  • 1/2 c Chicken Broth
  • 1 c Heavy Cream
  • 1/4 tsp Allspice
  • Salt and Pepper

Instructions

  • Simmer the shallots in white wine until the liquid is gone, add chicken broth and reduce.
  • Add heavy cream, allspice, pepper and quince and simmer until it is the thickness you like--I like it reduced by about half. Check if you need salt.
  • Cook fish any style.
  • When ready to serve, pour quince sauce over the fish or on the side.
  • Serve with pasta, rice, or bulgur.

Foil Baked Trout

Ingredients

  • 4 Coleson's Catch Trout dressed
  • 1 Red Onion sliced
  • 1 stalk celery thinly sliced
  • 1 small bell pepper finely chopped, a nice fresh Anaheim pepper would be great if available
  • 1/2 cup White Wine
  • 4 tbsp Lemon Juice
  • 1 tsp Thyme
  • 1/2 tsp crushed red chilies  optional
  • Salt and Pepper

Instructions

  • Mix all ingredients. 
  • Place each trout on its own piece of oiled foil large enough to wrap and seal it. 
  • Spoon the mixed ingredients on the trout and seal. 
  • Place in a baking pan and bake for 20 minutes in a 400 degree oven.

Notes

Serve in the foil, allowing everyone to open their own and enjoy the juice and veggies.

Tilapia, Tuna and Vegetable Broth

Servings 2 People

Ingredients

  • 12 oz pkg Coleson's Catch Tilapia Fillets diced
  • 1 pkg. Coleson's Catch Tuna Steak skinned, de-boned and diced
  • 1 Onion or Leek diced
  • 3 c. Root vegetables (carrots celery root, turnip, rutabaga), diced
  • 4 c. Chicken Broth
  • 1 c. White Wine
  • 1/4 c. Pickling spice in a cheese cloth or tea strainer
  • Salt and Pepper

Instructions

  • Bring the broth to a boil with the wine, onions vegetables and spices.
  • Once the carrots are cooked, add the diced fish. 
  • Bring to a boil.
  • Remove Pickling spice before serving.
