Tilapia with Curried Cabbage

  • 12 oz Coleson's Catch Tilapia Fillets thawed
  • 2 c green head cabbage shredded
  • ½ c Carrot grated
  • ½ c Onion diced
  • 1 Tbsp Curry Powder
  • 2 Tbsp garlic minced
  • 2 Tbsp Peeled grated ginger
  • ½ tsp crushed red chilies or fresh hot pepper of choice
  • ½ c Chicken Broth
  • Oil
  • Salt and Pepper

  • 12 oz Coleson's Catch Tilapia Fillets thawed
  • 2 c green head cabbage shredded
  • ½ c Carrot grated
  • ½ c Onion diced
  • 1 Tbsp Curry Powder
  • 2 Tbsp garlic minced
  • 2 Tbsp Peeled grated ginger
  • ½ tsp crushed red chilies or fresh hot pepper of choice
  • ½ c Chicken Broth
  • Oil
  • Salt and Pepper
Tilapia Fillets
Instructions
  1. In a saute pan, saute the onion in a generous amount of oil until clear.
  2. Add the garlic and curry powder and stir until it looks like it might brown then add the chicken stock, chilies and tilapia.
  3. Cover and simmer until the fish is cooked. Remove from the pan and keep warm. 
  4. Add the cabbage and carrots. Cover and simmer until limp and then remove the cover and reduce until the liquid is almost gone.
  5. Adjust seasonings and pour over the tipalia. 
  6. Serve with rice, quinoa, or couscous.

Tilapia with Sauteed Beets and Turnips

  • 12 oz Coleson's Catch Tilapia Fillets thawed
  • ¾ c beets sliced, boiled, and peeled
  • ¾ c turnips sliced and boiled
  • ½ c beet greens  shredded and blanched--keep warm
  • ½ c Onions diced
  • 3 Tbsp Butter
  • ¼ tsp Thyme
  • ½ c Chicken Broth
  • Salt and Pepper

  • 12 oz Coleson's Catch Tilapia Fillets thawed
  • ¾ c beets sliced, boiled, and peeled
  • ¾ c turnips sliced and boiled
  • ½ c beet greens  shredded and blanched--keep warm
  • ½ c Onions diced
  • 3 Tbsp Butter
  • ¼ tsp Thyme
  • ½ c Chicken Broth
  • Salt and Pepper
Instructions
  1. In a saute pan, saute the beets in butter until they start to brown, set aside and keep warm. 
  2. Saute the beets greens in the same way.  Keep them separate to keep the colors crisp. 
  3. In a sauté pan, saute the onions in the 1 Tbsp butter until golden brown. 
  4. Add the chicken broth, thyme, and tilapia. Cover and simmer until the tilapia is done. 
  5. Place the tilapia in a flat bowl and alternate the beet and turnips on top, sprinkle with the greens and pour the liquid over. 
  6. If you really like the greens, you can use more of them as a bed.

  • ½ c red seedless grapes cut in half
  • 2 Tbsp Shallots minced
  • 1 tsp lemon thyme leaves
  • 2 Tbsp cider vinegar
  • ¼ c Chicken Broth
  • ¼ c Heavy Cream
  • Salt and Pepper

  • 12 oz pkg Tilapia fillets thawed & seasoned with salt and pepper
  • ½ c red seedless grapes cut in half
  • 2 Tbsp Shallots minced
  • 1 tsp lemon thyme leaves
  • 2 Tbsp cider vinegar
  • ¼ c Chicken Broth
  • ¼ c Heavy Cream
  • Salt and Pepper
Instructions
  1. In a saute pan, simmer the tilapia, shallots, vinegar and chicken broth until the broth is almost gone.
  2. Add the cream and grapes and simmer until the cream starts to thicken.
  3. Adjust seasonings.
  4. Serving suggestions: a green vegetable or salad.

  • 12 oz pkg Tilapia fillets thawed
  • cumin chili powder, oil, salt and pepper
  • 2 limes
  • 2/3 c sliced mixed color onions
  • 2/3 c sliced mixed color bell peppers
  • 2/3 c Eggplant diced
  • hot pepper fresh or dried
  • 2/3 c Tomato diced
  • 2/3 c cooked corn
  • ¼ c cilantro leaves
  • ½ c Sour Cream
  • 2 large flour tortillas

  • 12 oz pkg Tilapia fillets thawed
  • cumin chili powder, oil, salt and pepper
  • 2 limes
  • 2/3 c sliced mixed color onions
  • 2/3 c sliced mixed color bell peppers
  • 2/3 c Eggplant diced
  • hot pepper fresh or dried
  • 2/3 c Tomato diced
  • 2/3 c cooked corn
  • ¼ c cilantro leaves
  • ½ c Sour Cream
  • 2 large flour tortillas
Instructions
  1. Squeeze and then zest the limes, mixing juice and skin.
  2. Season tilapia with salt, pepper, cumin and chili powder. Splash with lime juice mixture and marinate for at least an hour.
  3. Saute the onions first in oil, adding the eggplant before the onion brown and cook until tender.
  4. Add the bell peppers and cook until tender.
  5. Add hot pepper and cumin and chili powder to taste (½ – 1 tsp each).
  6. Saute for a minute or two add tomatoes and corn and cook until warmed through.
  7. Adjust seasonings.
  8. Slice the tilapia into thin strips and saute in hot oil for 2 minutes.
  9. Toss with the vegetables, remaining lime mixture, sour cream and cilantro.
  10. Heat the tortilla on a hot flat surface or over an open flame and fill with tilapia and vegetables.

  • 1 Whole Tilapia cleaned and scaled
  • 1/2 cup Flour
  • 1 Egg lightly beaten
  • 1 cup of your favorite style bread crumbs
  • 1/2 C canola oil b>Gravy Ingredients:
  • 3/4 C Chicken Stock
  • 1/4 C Heavy Cream
  • 1 Tbsp Shallots chopped
  • Salt and Pepper

Instructions
  1. Rinse the Tilapia; pat dry and season the inside and outside with salt and pepper.
  2. Dust both sides with flour, dip in the beaten egg, and then roll in the bread crumbs.
  3. Saute in hot oil until brown and crispy.
  4. To make gravy, simmer the ingredients in a saucepan for 10 minutes.
  5. Mix flour or cornstarch with a little water; add to the pan.
  6. Continue to simmer until it reaches desired thickness, about 5 minutes.
