  • 4 Coleson’s Catch Catfish Fillets
  • 1/4 c Dijon mustard
  • 1/4 c Butter melted
  • 1 c pecans roughly chopped
  • 4 c celery root diced
  • 1/4 c olive oil
  • Salt and Pepper

  • 1/4 c Dijon mustard
  • 1/4 c Butter melted
  • 1 c pecans roughly chopped
  • 4 c celery root diced
  • 1/4 c olive oil
  • Salt and Pepper
Catfish Fillets
Instructions
  1. Season the celery root with salt and pepper and toss in the olive oil, spread on a sheet pan.
  2. Salt and pepper the catfish fillets.
  3. Mix the Dijon mustard and melted butter, spread on one side of the catfish.
  4. Sprinkle with the pecans and place them on top of the celery root.
  5. Bake at 400 degrees for approximately 20 minutes.

  • 12 oz Coleson's Catch Tilapia Fillets thawed
  • 2 c green head cabbage shredded
  • ½ c Carrot grated
  • ½ c Onion diced
  • 1 Tbsp Curry Powder
  • 2 Tbsp garlic minced
  • 2 Tbsp Peeled grated ginger
  • ½ tsp crushed red chilies or fresh hot pepper of choice
  • ½ c Chicken Broth
  • Oil
  • Salt and Pepper

  • 12 oz Coleson's Catch Tilapia Fillets thawed
  • 2 c green head cabbage shredded
  • ½ c Carrot grated
  • ½ c Onion diced
  • 1 Tbsp Curry Powder
  • 2 Tbsp garlic minced
  • 2 Tbsp Peeled grated ginger
  • ½ tsp crushed red chilies or fresh hot pepper of choice
  • ½ c Chicken Broth
  • Oil
  • Salt and Pepper
Tilapia Fillets
Instructions
  1. In a saute pan, saute the onion in a generous amount of oil until clear.
  2. Add the garlic and curry powder and stir until it looks like it might brown then add the chicken stock, chilies and tilapia.
  3. Cover and simmer until the fish is cooked. Remove from the pan and keep warm. 
  4. Add the cabbage and carrots. Cover and simmer until limp and then remove the cover and reduce until the liquid is almost gone.
  5. Adjust seasonings and pour over the tipalia. 
  6. Serve with rice, quinoa, or couscous.

  • 8 Large Asparagus Spears cut into 1 inch pieces
  • 8 Crimini Mushrooms medium-sized, quartered
  • ½ Yellow Onion medium-sized, sliced
  • ½ Red Bell Pepper sliced
  • 1 Tbsp garlic chopped
  • 1 Tbsp Fresh Ginger grated
  • ¼ c Sake
  • 1 Tbsp Soy Sauce
  • 1 tsp Sesame Oil
  • 1 tsp Sesame Seeds toasted
  • Salt and Pepper
  • Canola oil
  • Cornstarch to dust

  • 8 Large Asparagus Spears cut into 1 inch pieces

Flounder Fillets
Instructions
  1. Pre heat oven to 400°
  2. Season Flounder with salt and pepper; dust with cornstarch.  
  3. Sauté until golden and set aside in a glass baking dish.
  4. Sauté onion until clear, add the mushrooms and sauté until brown.  
  5. Add the peppers, garlic and ginger and stir until limp.
  6. Add asparagus, sake, soy sauce, sesame oil and sesame seeds to the pan, bring to a boil.
  7. Pour over the flounder and bake for 10 minutes.  
  8. Serve with rice or other grain.

  1. Season the flounder fillets with salt and pepper and dust with flour.  
  2. Sauté in hot canola oil and set aside.
  3. In a large sauté pan heat broth, garlic and ginger.  
  4. Add spinach and toss until it just starts to go limp. Remove from heat.  
  5. Add the onion, pepper, soy sauce and sesame oil. Cover and let sit for 2-3 minutes.    
  6. Toss the spinach and vegetables to mix.
  7. Place the flounder on a plate and top with spinach and sprinkle with strawberries and sesame seeds.

  • Flour to coat
  • Salt and Pepper
  • 1 Tbsp Butter
  • ¼ c Yellow Onion diced
  • 2 c Green Cabbage shredded
  • 2 Tbsp Fresh Dill chopped
  • ½ c Chicken Broth
  • ½ c cream cheese cut into cubes

  • 1 Tbsp Butter
  • ¼ c Yellow Onion diced
  • 2 c Green Cabbage shredded

  • ½ c Chicken Broth
  • ½ c cream cheese cut into cubes
Cod Fillets
Instructions
  1. Dry the cod fillets with paper towel, season with salt and pepper and dust with flour. Sauté in oil, set aside.
  2. In a saucepan sauté the onion in butter until clear. Add the cabbage and broth and cover.  
  3. Cook until al dente and add the dill and cream cheese turn off heat stir and cover. After a few minutes stir again. The cream cheese should be mostly melted but not all the way.  
  4. Place the cod in a shallow bowl and cover with the cabbage.
