Trout with Bacon and Mushroom Cream

Servings 4 People

Ingredients

  • 4 portions Coleson's Catch Trout Fillets 6-8 oz. each
  • bacon
  • 2 tbsp Onion finely diced
  • 1 tbsp Butter
  • 1/2 cup Mushrooms sliced
  • 1/2 cup Chicken Stock
  • 1/4 tsp Black Pepper
  • 1 tsp Thyme
  • cornstarch or roux

Instructions

  • Finely dice the bacon and saute until very crisp. 
  • Drain the fat and set the bacon on a paper towel. 
  • Saute the onion in the butter for 2 to 3 minutes. 
  • Add mushrooms and saute for an additional 2 to 3 minutes.
  • Add chicken stock, pepper, and thyme, and bring to a boil. 
  • Thicken with cornstarch or roux to desired thickness. 
  • Add the bacon and simmer for 2 to 3 minutes. 
  • Sauté or boil the trout.

Notes

Top with sauce and serve with rice or potatoes. Additional Comments: * Roux is melted butter mixed with flour to make a paste.

Tilapia Fillets with Beets

Ingredients

  • 12 oz pkg Coleson's Catch Tilapia Fillets
  • 2 Fresh Beets with greens attached
  • 1 Tbsp. balsamic vinegar
  • 1/2 Onion finely diced
  • 1/2 c. Chicken Stock
  • 1/2 tsp. Thyme
  • Salt and Pepper to taste

Instructions

  • Peel the beets. Slice thinly. Chop the stems and remaining greens.
  • Place all the ingredients in a casserole dish with the fish placed on top.
  • Cover and bake for 20 minutes at 350°.
  • Serve with rice.

Poached Tilapia

Ingredients

  • 12 oz pkg Coleson's Catch Tilapia Fillets
  • 1 c. water
  • 1 Tbsp Pickling spice
  • 1/2 c. Onion diced
  • 1 Tbsp Lemon Juice
  • Salt

Instructions

  • In a large bottom pan, (enough to accommodate the fillets side by side) boil the water with the onion, lemon and seasonings. 
  • Add the fillets and simmer for 4-6 minutes depending on thickness. 
  • Remove and cool.

Notes

The broth can be saved for future poaching or used to make soup.

Tilapia with Swiss Chard

Ingredients

  • 12 oz pkg Coleson's Catch Tilapia Fillets
  • 1 bunch Swiss Chard washed, dried and chopped
  • 1/2 c. Onion diced 
  • 1/2 lb. bacon diced
  • 1/2 c. Tomatoes diced 
  • 2 Tbsp Vinegar
  • Salt and Pepper

Instructions

  • Sauté the bacon until crisp; remove from the pan. 
  • Add the onions to the pan and sauté until tender. 
  • Add the Swiss Chard and sauté until tender. 
  • Add the tomatoes, and vinegar, bring to a boil.
  • Finally, add the bacon and adjust the seasoning with salt and pepper.

Notes

For this recipe you can prepare the Tilapia two ways depending on your preference:  Dust the Tilapia with flour and sauté in hot oil until very crisp and serve the chard over or on the side. Or place the Tilapia in a baking dish and pour the chard mixture over it and bake for 20 minutes.

Tilapia with Eggplant and Squash Recipe

Ingredients

  • 2 pkg 12 oz. Coleson's Catch Tilapia Fillets
  • 1 Eggplant unpeeled, diced (I recommend Japanese Eggplant)
  • 1 Yellow Squash   diced
  • 1 Chayote peeled, cored and sliced
  • 1 Onion peeled and diced
  • 1 Green Bell Pepper diced
  • 2/3 c. Ripe Tomato diced
  • 2 Tbsp garlic chopped
  • 1 c. Portobello Mushroom sliced 
  • 1/2 c. Chicken Broth
  • Salt and Pepper
  • Crushed red pepper flakes or hot pepper optional

Instructions

  • Sauté the onion, eggplant, bell pepper and mushroom in hot oil until soft, add the garlic, stir. 
  • Add the rest of the ingredients except the fish. 
  • Simmer until the squash is tender. 
  • You can cook the Tilapia any way. 
  • An easy way is to pour the eggplant mixture over the fish in a baking dish and cover and bake for 15 minutes in a hot oven.
  • Or you can put the fish in another sauté pan and pour the eggplant mixture over it and simmer for 5-7 minutes.
