Cornmeal Crusted Tilapia with Spicy Tomato Sauce

Servings 2 People

Ingredients

  • 12 oz pkg Coleson's Catch Tilapia Fillets
  • 1/4 c. Milk
  • 1/4 c. corn meal
  • Flour
  • 1/4 tsp. Cumin
  • 1/4 tsp. Chili Powder
  • 1/4 tsp. Garlic Salt
  • 1 c. Tomatoes diced
  • 1/2 c. Yellow Onion diced
  • 1 tsp. garlic chopped
  • 1/2 c. Chicken Stock
  • Canola oil
  • Red Chilies crushed 
  • 2 tsp. Butter
  • Salt and Pepper

Instructions

  • Soak the tilapia fillets in milk for at least an hour. 
  • Sauté onion in canola oil until translucent. 
  • Add the garlic and cook for a bit but don't brown. 
  • Add the tomatoes and broth. 
  • Add approximately 1/4 tsp of each spice and simmer until the liquid is almost gone.
  • Add butter. When melted, adjust seasoning. Set aside.
  • Mix a bit of flour into the corn meal then season with the spices.
  • Take the wet Tilapia and press into the dry mixture, coating it well. Sauté until golden.
  • Top with the spicy tomato sauce and serve with a side salad.

Halibut with Swiss Chard and Bacon

Servings 2 People

Ingredients

  • 1 pkg Coleson's Catch Halibut
  • 6 strips Bacon
  • 1/2 c. Yellow Onion diced
  • 1 1/2 c. Swiss chard chopped
  • 1 tsp. garlic minced
  • 1/4 c. Chicken Broth
  • Salt and Pepper

Instructions

  • Cut the bacon into bits and sauté. 
  • Drain and use the fat to sauté the onion until translucent.
  • Add the chard and garlic, cook until garlic is about to brown. 
  • Add chicken broth. 
  • Cover and steam until chard is al dente. Cook halibut any style.
  • Top with chard mixture.
  • Serve with a grain.

Flounder with Radish and Turnips

Servings 2 People

Ingredients

  • 12 oz pkg Coleson’s Catch Flounder Fillets
  • 3/4 c. Radishes sliced
  • 3/4 c. turnips sliced
  • 3/4 c. shredded turnip greens (if you can get them; if not substitute another green or eliminate)
  • 3/4 c. Yellow Onion diced
  • Butter
  • 1/2 c. Chicken Broth
  • Splash of Balsamic vinegar

Instructions

  • Season the flounder and dust with flour.
  • Sauté in butter until golden and set aside.
  • Sauté the onion until tender.
  • Add the turnips and radishes and cook until tender.
  • Add the greens and broth.
  • Cover and cook just to wilt greens.
  • Hit with a splash of balsamic vinegar, adjust seasoning, and pour over fish.
  • Serve with any grain.

Flounder with Goat Cheese and Olives

Ingredients

  • 12 oz pkg Coleson’s Catch Flounder Fillets
  • 4 oz. plain goat cheese
  • 4 oz. cream cheese
  • 1/3 c. chopped olives your choice-strong-flavored ones work well
  • 1/3 c. Red Onion finely diced
  • Black Pepper
  • 1 c. sliced mushroom your choice
  • 1/2 c. Yellow Onion diced
  • A bit of butter
  • 1/2 c. dry white wine
  • 3 Tbsp fresh chopped parsley

Instructions

  • Mix the cheeses, olives, red onion, and pepper until smooth and spreadable.
  • Place an equal amount of the cheese mixture on the tail end of each piece of fish.
  • Roll up like a sleeping bag and place in a square glass casserole dish; set the dish aside.
  • Sauté the mushrooms and yellow onions and pour over the fish, top with wine and parsley.
  • Cover and bake at 350 degrees F for 30-40 minutes depending how fat the rolls are.
  • Serve with any grain.

Simmered Cod Fillets with Basil and Purple Potatoes

Servings 2 People

Ingredients

  • 12 oz pkg Coleson’s Catch Cod Fillets
  • 1 c. Purple Potatoes diced
  • 1/2 c. Yellow Onion diced
  • 1/3 c. Celery diced 
  • 1/2 c. Carrot diced 
  • 1/3 c. Tomatoes diced 
  • 2 Tbsp garlic chopped
  • 3 Tbsp fresh basil chopped
  • 1/4 c. White Wine
  • 1 c. Chicken Broth
  • 1 Tbsp Butter
  • Salt and Pepper

Instructions

  • Sauté onion in a large sauté pan until translucent; add white wine and chicken broth, bring to a boil.
  • Add all non-fish ingredients and simmer until al dente. 
  • Season the Cod with salt and pepper.
  • Place on top of the vegetables and cover.
  • The Cod is typically thin so it will be done quickly.
  • Serve with bread and salad.
