Simmered Cod Fillets with Basil and Purple Potatoes

Ingredients
- 12 oz pkg Coleson’s Catch Cod Fillets
- 1 c. Purple Potatoes diced
- 1/2 c. Yellow Onion diced
- 1/3 c. Celery diced
- 1/2 c. Carrot diced
- 1/3 c. Tomatoes diced
- 2 Tbsp garlic chopped
- 3 Tbsp fresh basil chopped
- 1/4 c. White Wine
- 1 c. Chicken Broth
- 1 Tbsp Butter
- Salt and Pepper
Instructions
- Sauté onion in a large sauté pan until translucent; add white wine and chicken broth, bring to a boil.
- Add all non-fish ingredients and simmer until al dente.
- Season the Cod with salt and pepper.
- Place on top of the vegetables and cover.
- The Cod is typically thin so it will be done quickly.
- Serve with bread and salad.
