Sea Scallops with Asian Eggplant

Course Appetizer
Servings 2 People

Ingredients

  • 1 lb Coleson's Catch Sea Scallops
  • 1 Eggplant diced
  • 1/4 cup Oil
  • 1/2 c Yellow Onion diced
  • 2 Tbsp garlic chopped
  • 2 Tbsp Fresh Ginger grated
  • 1/2 c Chicken Broth
  • 2 Tbsp Soy Sauce
  • 1 Tbsp Sesame Oil
  • 2 Tbsp Sesame Seeds toasted
  • Salt and Pepper
  • 2 Tbsp Green Onion sliced
  • Flour

Instructions

  • Sauté the onion and eggplant separately until tender - I like to brown them both a bit.
  • Combine onion & eggplant.
  • Add ginger and garlic, sauté lightly not browning the garlic.
  • Add broth and soy sauce.
  • Bring to a boil and turn off. Adjust seasoning. 
  • Season the scallops, dust with flour and sauté.
  • Put the eggplant on a plate and place the scallops on top.
  • Garnish with sesame seed and green onion. 
  • Serve with a grain or salad.

Notes

If you want spicy add crushed or fresh peppers.

Imitation Crabmeat Stir Fry

Ingredients

  • 8 oz. Coleson's Catch Imitation Crabmeat flakes or chunks
  • 1/2 Yellow Onion julienne
  • 1/2 Red Bell Pepper julienne
  • 2 c shredded Napa cabbage or regular green cabbage
  • 2 Tbsp. Ginger grated
  • 1 Tbsp. garlic chopped
  • 2 Tbsp. Soy Sauce
  • 2 Tbsp. Vegetable oil corn or canola
  • 1 Tbsp. Sesame Oil
  • Salt and Pepper to taste

Instructions

  • Heat a sauté pan, add vegetable oil and when hot, add onions and peppers.
  • Stir over medium heat about a minute and add ginger and garlic.
  • Toss in the Crabmeat and cabbage.
  • As the cabbage starts to wilt add the soy sauce and sesame oil.
  • When all is heated through, turn off heat.

Notes

Serving Suggestions: Serve over steamed white rice or Asian noodles.

  • 1/2 a yellow onion julienne
  • 1/2 a red bell pepper julienne
  • 2 c. shredded Napa Cabbage or regular green cabbage
  • 2 Tbsp. Ginger grated
  • 1 Tbsp. garlic chopped
  • 2 Tbsp. Soy Sauce
  • 2 Tbsp. Vegetable oil corn or canola

Thai Mussels in the Shell

Ingredients

  • 1 box Coleson's Catch Pacific Delight Greenshell Mussels in Half Shell
  • 1 Onion finely diced
  • 1 Green Bell Pepper finely diced
  • 1 Red Bell Pepper finely diced
  • 1/4 cup chopped mint
  • 2 Tbsp. Lemon Zest
  • 2 Tbsp. Soy Sauce
  • 1/2 cup plum sauce
  • 2 Tbsp. Sesame Oil
  • 1/2 tsp. crushed red chilies 
  • 1/2 cup diced roasted peanuts

Instructions

  • Sauté the onion and bell peppers in a bit of oil (corn, peanut or canola) until tender.
  • Add the other ingredients except peanuts.
  • Heat through and simmer for a couple of minutes.
  • If it is real thick add a bit of water, if it seems too thin let it cook down until it is not watery. Cool.
  • Spoon a mound of the seasoned vegetables on to each mussel.
  • Sprinkle with the peanuts and heat in oven at 350° for 15 minutes.

Ingredients

  • 12 pcs Coleson's Catch Kono Mussels on the Half Shell
  • 1 c Diced Apricot
  • 2 Tbsp grated fresh ginger
  • 2 Tbsp Diced Green Onion
  • 1 Tbsp Soy Sauce
  • 1 Tbsp Sesame Oil
  • 2 Tbsp Toasted sesame seeds
  • Salt and Pepper

Instructions

  • Toss everything together except the Mussels.
  • Top the mussels with the mixture.
  • Heat either in the oven on a sheet pan or on an open flame.
  • Heat until warmed through-10-15 minutes.

Notes

Serve as a starter or a main course with tossed salad.
