Imitation Crab Meat with Avocado Salad Sandwiches

Ingredients
- 1 c Coleson's Catch Imitation Crab Meat shredded or diced
- 2 Tbsp Red Onion diced
- 1/2 c Tomatoes diced
- 1/2 c Avocado diced
- 1/2 c Black Olives sliced
- 1/2 c Thousand Island dressing
- Cheddar Cheese shredded or sliced to top
- 4 slices Sour Dough Bread toasted
- Parsley chopped
Instructions
- Gently mix all ingredients except cheese, bread and parsley.
- Divide the mixture onto the toasted bread and top generously with the cheese.
- Pop into a toaster oven or oven until cheese is very bubbly.
- Top with the parsley.

- 1 pkg. Coleson's Catch Imitation Crab Meat flaked into small pieces
- 2 Tomatoes diced
- 1 Red Onion diced
- 1/2 cup Cilantro chopped
- 1 Jalapeño minced
- 2 Tbsp Lime Juice
- 2/3 c Sour Cream
Instructions
- Mix all ingredients and refrigerate for 24 hours.
Notes
Garnish with diced avocado, and serve with tortilla chips for dipping.

Ingredients
- 8 oz. Coleson's Catch Imitation Crab Meat legs
- 1/4 c White Wine
- 1/2 c Chicken Broth
- 2 Tbsp. garlic chopped
- 2 Tbsp. Parsley chopped
- 2 Tbsp. Butter
Instructions
- Combine all ingredients except Crabmeat.
- Bring to a boil, simmer and then add Crabmeat.
- When heated through, serve with garlic bread.
Notes
Variation: add a pinch of saffron.
Southern-fried Imitation Crabmeat Legs
Southern-fried Imitation Crabmeat Legs

Ingredients
- 16 oz. Coleson's Catch Imitation Crabmeat legs
- 1 Egg beaten
- 2 Tbsp Flour
- Breadcrumbs
- salt to taste
Instructions
- Bread the Crabmeat legs like you would for fried chicken.
- Salt the Crabmeat, then dip in flour, then egg, then seasoned breadcrumbs and sauté.
Notes
Serve with ranch dressing as a dipping sauce.
