St. Andrews Barbecue Sauce For Salmon

Ingredients

  • 1 Tbsp. butter
  • 4 oz. chopped onion
  • 1 Tbsp. minced garlic
  • 2 Tbsp. chili powder
  • 1 Tbsp. minced jalapeno pepper
  • 4 oz. coffee
  • 4 oz. Worcestershire sauce
  • 4 oz. tomato paste
  • 2 oz. apple cider vinegar
  • 2 oz. brown sugar
  • 2 Tbsp. apple cider stock as needed

Instructions

  • Heat the butter in a saucepan over medium heat.
  • Add the onion and garlic and saute for two or three minutes until an aroma is apparent.
  • Add the chili powder and jalapenos.
  • Sauté the mixture for another 30 to 45 seconds.
  • Add the coffee, Worcestershire Sauce, tomato paste, vinegar, brown sugar, and cider.
  • Simmer for 20 minutes, adding stock if needed, until it is somewhat thickened.
  • Keep warm until needed.

Southwestern Corn Meal Crusted Chilean Sea Bass

Servings 2 People

Ingredients

  • 12 oz pkg Coleson's Catch Chilean Sea Bass Fillets
  • 1/2 cup cornmeal
  • 1/2 tsp Cumin
  • 1 tsp Chili Powder
  • 1/4 tsp Garlic Salt
  • 1/2 tsp Cajun seasoning*

Instructions

  • Combine the dry ingredients. 
  • Sprinkle both sides of the fillets with salt and pepper and coat with the corn meal mixture. 
  • Saute in hot oil.

Tilapia Fish Tacos

Servings 2 People

Ingredients

  • 12 oz pkg Coleson's Catch Tilapia thawed
  • Marinade #1 
  • 2 tsp. Chili Powder
  • 1 tsp. garlic chopped
  • 1 Tbsp Lemon Juice
  • 1 tsp. Italian seasoning
  • Salt and pepper Marinade #2
  • 2 tsp. Cajun seasoning*
  • 1 tsp. garlic chopped
  • 1 Tbsp Lime Juice
  • Salt and Pepper

Instructions

  • Since the Tilapia has a nice flavor on its own you can just season it with lemon, garlic, salt and pepper and the flavor is great.
  • If you want a big bold flavor try the chili-powder or Cajun marinades.
  • With the bolder marinades, I find I don't need salsa, just vegetables and cheese.
  • I like to marinate the fish for at least 8 hours, bake the fish fillets whole, and then cut them after they are cooked.
  • Serve the tacos with your favorite garnishes.

Cornmeal Crusted Tilapia with Spicy Tomato Sauce

Servings 2 People

Ingredients

  • 12 oz pkg Coleson's Catch Tilapia Fillets
  • 1/4 c. Milk
  • 1/4 c. corn meal
  • Flour
  • 1/4 tsp. Cumin
  • 1/4 tsp. Chili Powder
  • 1/4 tsp. Garlic Salt
  • 1 c. Tomatoes diced
  • 1/2 c. Yellow Onion diced
  • 1 tsp. garlic chopped
  • 1/2 c. Chicken Stock
  • Canola oil
  • Red Chilies crushed 
  • 2 tsp. Butter
  • Salt and Pepper

Instructions

  • Soak the tilapia fillets in milk for at least an hour. 
  • Sauté onion in canola oil until translucent. 
  • Add the garlic and cook for a bit but don't brown. 
  • Add the tomatoes and broth. 
  • Add approximately 1/4 tsp of each spice and simmer until the liquid is almost gone.
  • Add butter. When melted, adjust seasoning. Set aside.
  • Mix a bit of flour into the corn meal then season with the spices.
  • Take the wet Tilapia and press into the dry mixture, coating it well. Sauté until golden.
  • Top with the spicy tomato sauce and serve with a side salad.

Red Snapper and Santa Fe Style Chile Sauce

Servings 4 People

Ingredients

  • 4 portions Coleson's Catch Red Snapper 6-8 oz. each
  • 1/2 c. Onion diced
  • 2 Tbsp garlic chopped
  • 2 Tbsp olive oil
  • 1 Tbsp Chili Powder
  • 1 tsp. Cumin
  • 1 tsp. Basil
  • 1 c. Fresh or canned tomatoes diced
  • 1/2 tsp. crushed chiles

Instructions

  • Sauté the onion and garlic in the olive oil until the onion is translucent but not brown. 
  • Add the rest of the ingredients and simmer for 20 minutes. 
  • Poach, bake, sauté, or broil the snapper. 
  • Serve with rice.
