Herb Steamed Trout

Ingredients

  • 4 Coleson's Catch Trout dressed
  • 2 tbsp garlic
  • 1/4 cup Basil (oregano, dill and parsley are good, too), chopped
  • 1 lemon cut into thin slices
  • 1 small red onion sliced
  • Salt and Pepper

Instructions

  • Divide the ingredients into fourths.  Sprinkle salt and pepper inside the trout. 
  • Place the other ingredients inside the fish. 
  • Arrange the trout on a rack that will fit inside a roasting pan and place in the pan.
  • The pan should have an inch of boiling water in the bottom and the fish should be above the water.  Cover with foil. 
  • The cooking can take place on top of the stove on a burner or in the oven. 
  • On top of the stove is faster (approximately 10 minutes). 
  • In a 400 degree oven, it will take 20 minutes.

Ingredients

  • 3 cups Roma tomatoes diced
  • 3 tbsp garlic
  • 3 tbsp basil chopped
  • 1/4 cup extra virgin olive oil

Instructions

  • Combine all ingredients and bring to a boil, simmer for 10 minutes.

Notes

Great with all preparations of trout and roasted root vegetables.

Tilapia with Leeks, Tomato and Basil

Ingredients

  • 12 oz pkg Coleson's Catch Tilapia Fillets
  • 1 large leek
  • 2 Tomatoes diced
  • 1/4 c. Basil
  • 1/2 c. Chicken Stock
  • 1 Tbsp garlic chopped

Instructions

  • To prepare the leeks: Cut off the root and tough green parts. 
  • Slice into 1/4 inch slices and put into a large container of cold water.
  • Separate the concentric circles. Dirt will be released into the water. Remove the leeks from the water. 
  • Arrange the Tilapia fillets in a baking dish. 
  • Place the other ingredients on top and cover with foil.
  • Bake for 30 minutes at 375.

Ingredients

  • 12 oz pkg Coleson's Catch Tilapia Fillets
  • 1/2 c. Chicken Broth
  • 1/4 c. Green Pimento Stuffed Olives sliced
  • 1 tsp. garlic chopped
  • 1 Tbsp Basil chopped
  • 2/3 c. Artichoke Hearts quartered (if using fresh, steam first)

Instructions

  • Put all ingredients in a saute pan and simmer for 30 minutes.

Tilapia Stuffed Bell Peppers

Ingredients

  • 12 oz pkg Coleson's Catch Tilapia Fillets
  • 1/2 c. Celery diced
  • 2 red bell peppers
  • 1 c. cooked rice (flavored if you have it)
  • 2 Tbsp Basil chopped
  • 1 tsp. garlic chopped 
  • 2/3 c. Onion diced
  • 1 c. Marinara sauce:

Instructions

  • Halve and core the bell peppers. 
  • Dice the Tilapia and toss with remaining ingredients.
  • Fill the bell peppers with rice mixture and place in a glass dish. 
  • Cover and bake at 350 degrees F. for 1 hour.

Notes

If using leftover fish or seafood for this, proceed in the same way--except when cooking, you will only need to heat it through, not actually cook it.
