Instructions
  1. Mix all ingredients.
Recipe Notes

All the other dishes have garlic or some other dominant flavor. This salad is the palate cleanser and the balance in the meal.

  • 1/2 c olive oil

  1. Mix all ingredients and chill overnight.

  • 6 cups Eggplant diced peeled
  • 3 Tomatoes
  • 1 Tbsp Basil chopped
  • 1/4 c white wine vinegar
  • 1/2 c olive oil
  • 1 tsp garlic chopped
  • Salt and Pepper

  • 6 cups Eggplant diced peeled
  • 3 Tomatoes
  • 1 Tbsp Basil chopped
  • 1/4 c white wine vinegar
  • 1/2 c olive oil
  • 1 tsp garlic chopped
  • Salt and Pepper
Instructions
  1. Mix all ingredients except eggplant in a blender or food processor.
  2. Blanch the eggplant in salted water until tender.
  3. Drain well and toss with dressing and chill.

  • 2/3 c olive oil
  • 1 Tbsp Shallots chopped
  • 2 Tbsp Tarragon fresh chopped
  • 1/2 Honey
  • Salt and Pepper

  • 3 c Sweet Potato cooked diced
  • 1/3 c white wine vinegar
  • 2/3 c olive oil
  • 1 Tbsp Shallots chopped
  • 2 Tbsp Tarragon fresh chopped
  • 1/2 Honey
  • Salt and Pepper
Instructions
  1. Make a dressing by whisking all ingredients together other than the potatoes.
  2. Pour over the still warm potatoes and chill.

  • 1/4 c Red Onion diced
  • 1/4 c Lemon Juice

  • 1 Tbsp Rosemary chopped
  • Salt and Pepper

  1. Toss all ingredients the day before. Let chill for several hours.
