Caesar Wrap

Caesar Wrap

Servings 1 People

Ingredients

  • tortilla
  • 2 c romaine chopped
  • 1/2 cooked chicken shrimp or other
  • 1/2 c croutons
  • 1/4 Parmesan shredded
  • Caesar dressing

Instructions

  • All of above ingredients can be purchased at the store and kept on hand to assemble whenever.
  • Toss all the filling ingredients together and roll in the tortilla. It doesn't get easier than that.

Notes

I have found in making the predominately lettuce wraps, it is easier to roll the tortilla if it is slightly heated.

Minted Cantaloupe

Minted Cantaloupe

Servings 2 People

Ingredients

  • 2 c Ripe Cantaloupe diced
  • 2 Tbsp Lime Juice
  • 2 Tbsp Mint chopped

Instructions

  • Mix ingredients and chill for 4 plus hours.

Notes

This is a great snack or dessert.

Scallops with Cranberry, Orange and Basil

Course Appetizer
Servings 2 People

Ingredients

  • 12 oz Coleson’s Catch Scallops
  • Marinade:
  • 1/2 c cranberry juice
  • 1/4 c Lemon Juice
  • 1 tbsp Orange Zest
  • 2 Tbsp fresh chopped basil
  • 1/2 c diced red onion
  • 1/4 tsp Salt and Pepper

Instructions

  • Marinate for 24 hours. Garnish with diced celery and orange and shredded ice burg lettuce.

Notes

Serve with sweet baguette.

Cold Tuna with Cilantro & Lime

Cold Tuna with Cilantro & Lime

Course Main Dish
Servings 2 People

Ingredients

  • 12 oz Coleson’s Catch Tuna Steaks
  • Marinade:
  • 2 Tbsp tequila
  • 1 tsp crushed chili flakes
  • 1/4 c Lime Juice
  • 1/4 c Cilantro chopped
  • 1/4 tsp Salt and Pepper
  • 1/2 tsp Lime Zest grated
  • 1/2 tsp Cumin
  • 2 Tbsp white wine vinegar
  • 1 Tbsp garlic chopped
  • 1 tsp Chili Powder
  • 1/2 c Red Onion diced
  • 1/4 c water

Instructions

  • Thinly slice the tuna into strips and toss with the marinade.
  • Chill for 24 hours.
  • Serve with tortillas.

Notes

Can be served with shredded iceberg lettuce, diced tomatoes, diced jicama and such.

Mozzarella with Basil

Mozzarella with Basil

Course Appetizer
Servings 2 People

Ingredients

  • Mozzarella
  • 10-15 basil leaves
  • 2 cloves garlic
  • 1 Tbsp red wine vinegar
  • 1 Tbsp olive oil
  • Salt & Pepper

Instructions

  • Blend the ingredients into a smooth paste and coat the cheese with it.

Notes

This can be used as the start of a great salad--toss with diced tomatoes, cucumbers, olives, artichoke hearts, etc.
Additional Comments:
The easiest method of preparation is with a mortar and pestle because of the small amount. It tends to get lost in a blender or food processor, unless you have one of those nifty tiny food processors.
