Mozzarella with Basil

Mozzarella with Basil

Course Appetizer
Servings 2 People

Ingredients

  • Mozzarella
  • 10-15 basil leaves
  • 2 cloves garlic
  • 1 Tbsp red wine vinegar
  • 1 Tbsp olive oil
  • Salt & Pepper

Instructions

  • Blend the ingredients into a smooth paste and coat the cheese with it.

Notes

This can be used as the start of a great salad--toss with diced tomatoes, cucumbers, olives, artichoke hearts, etc.
Additional Comments:
The easiest method of preparation is with a mortar and pestle because of the small amount. It tends to get lost in a blender or food processor, unless you have one of those nifty tiny food processors.

Blue Cheese and Apples with Balsamic Vinegar

Blue Cheese and Apples with Balsamic Vinegar

Ingredients

  • 1/2 c Blue Cheese crumbled 
  • 1/2 c Sweet Apple diced firm 
  • 1 Tbsp Shallot or Red Onion diced 
  • 2-3 Tbsp balsamic vinegar
  • 1/4 c Toasted Pecans chopped 
  • Black Pepper

Instructions

  • Toss all ingredients together and use immediately.

Notes

This is good added in a salad or as a sandwich on a really good bread or roll--great with turkey.
Additional Comments:
From Chef Audrey: I like to start with a firm chunk of blue cheese and cut into squares, knowing it won't really end up as squares because it will crumble. The already crumbled blue cheese tends to have a lot of really small pieces which I don't like.

Lime and Orange Cucumbers

Lime and Orange Cucumbers

Servings 2 People

Ingredients

  • 2 c cucumbers peeled, seeded, and cut into crescents
  • Juice of one Lime
  • Juice of one Orange
  • 1/4 tsp Orange Zest
  • 1 tsp Red Onion or Shallot minced 
  • 1 Tbsp Mint chopped 

Instructions

  • Marinate everything for 24 hours.

Notes

Use on salads or as a salsa on grilled items.  It's great with tuna.

Red Wine Vinegar and Sweet Red Onions

Red Wine Vinegar and Sweet Red Onions

Total Time 2 days

Ingredients

  • 2 c Sweet Red Onion peeled and sliced (1/2 inch)
  • Hearty Red Wine Vinegar enough to cover, high quality
  • Salt and Pepper

Instructions

  • Place onions in a plastic container or jar and pour enough vinegar to cover onions.
  • Add salt and pepper, seal and shake.
  • Marinate for 48 hours, shaking it once or twice a day.

Notes

The onions are good on salads and sandwiches. The vinegar is really good in salad dressings and future marinades.

Asian Cucumbers, Bell Peppers and Red Onions

Asian Cucumbers, Bell Peppers and Red Onions

Total Time 1 day

Ingredients

  • 1/4 c Rice Wine Vinegar
  • 2 Tbsp Sugar
  • Pinch of salt
  • 1/2 tsp Sesame Oil
  • 2 c cucumbers skinned, seeded, and sliced into crescents 
  • 2 c Mixed Red Green, and/or Yellow Bell Peppers, seeded and cut into sticks
  • 2 c Red Onions skinned and cut into crescents

Instructions

  • Mix first four marinade ingredients.
  • Toss cucumbers, peppers and onions separately in marinade.
  • Chill in separate containers for 24 hours.

Notes

Good in salads or to top grilled items like a salsa.
