Jamaican Jerk Mahi-Mahi

Servings 2 People

Ingredients

  • 1 pkg Coleson's Catch Mahi-Mahi
  • 2 Tbsp grated ginger
  • 2 Tbsp Soy Sauce
  • 2 Tbsp Worcestershire sauce
  • 2 Tbsp Green Onion Chopped
  • 1/2 tsp Ground Allspice
  • 1/4 c Chicken Broth
  • 1/2 habanero pepper Chopped
  • Salt and Pepper

Instructions

  • To make the marinade, mix all the ingredients except the Mahi-Mahi.
  • The marinade can be made in a blender, food processor or chopped by hand. Of course you can make it hotter if you like spicy.
  • A bit of the marinade can be set aside and used as a kind of salsa on the fish. 
  • Cook the fish over a natural wood flame and add whole allspice berries to the flame to add more flavor.

Notes

The marinade used on the fish can be boiled and used as a sauce. There are many ways to cook this dish - some people simmer or bake the fish in the marinade but then you lose the benefit of cooking over an open flame.  In Jamaica they use the wood from the pimento tree which grows the pimento berries, marketed as allspice berries.

Mahi-Mahi with Peaches and Cherries

Ingredients

  • 1 pkg Coleson's Catch Mahi-Mahi
  • 2/3 cup Ripe peaches diced
  • 1/2 c Cherries halved & seeded
  • 1/4 c Red Onion diced
  • 1 Tbsp Mint minced
  • The juice of I lime
  • Salt and Pepper

Instructions

  • 6-8 hours before using, combine the non-fish items and chill.
  • Cook the Mahi-Mahi any style.
  • Top with fruit.
  • Serve with tossed salad and or rice or other grain.

Mahi-Mahi with Kale, Basil and Tomato

Ingredients

  • 1 pkg Coleson's Catch Mahi-Mahi
  • 1 cup Kale thinly sliced
  • 1/2 cup Yellow Onion diced
  • 2 Tbsp Oil bacon fat is nice
  • 2 Tbsp Basil chopped
  • 1 Tbsp garlic chopped
  • 1/2 c Tomato diced
  • 1/4 c Chicken Stock

Instructions

  • Sauté onion in oil until clear.
  • Add kale and basil, cook until limp.
  • Add garlic, tomato and stock.
  • Simmer until liquid is almost gone.
  • Cook Mahi-Mahi any style.
  • Top with kale mixture.
  • Serve with a starch or a salad.

Chilean Sea Bass with Orange and Black Pepper

Ingredients

  • 1 pkg. Coleson's Catch Chilean Sea Bass
  • 3/4 cup Orange Juice
  • 2 tbsp Onion diced
  • 1/4 tsp ground black pepper
  • 1/4 tsp Salt
  • 4 cups fresh spinach leaves

Instructions

  • In a saucepan, bring orange juice, onion, ground black pepper and salt to a boil.
  • Add spinach leaves and simmer until wilted.
  • Cook sea bass as desired, and top with Orange and Black Pepper Sauce.

Ingredients

  • 4 Coleson's Catch Trout Fillets
  • 1/2 cup Onion diced
  • 1 cup Tomatoes diced
  • 2 tbsp garlic chopped
  • 1/4 cup fresh basil leaves
  • 1/2 cup Spinach Leaves chopped
  • 1/2 tsp Salt and Pepper
  • 3 tbsp olive oil

Instructions

  • In a saucepan, heat olive oil and sauté remaining ingredients. 
  • Simmer 10-12 minutes.

Notes

Cook trout as desired and top with Tomato-Basil-Garlic Sauce.
