The best laid plans…yep, once again have gone awry. With summer ended and kids and family back to busy schedules, time once again is at a premium. You say you were going to the market with the best intentions of stocking up on provisions but “life happened” and now there’s no way you’re getting to the store. Good thing you have Coleson’s Catch® in the freezer — it thaws quickly making meals fast & easy to prepare.
Between back to school and everything else, the last thing we have is time for complicated food preparation. So for me the best solution is a well stocked pantry and freezer which allow me to prepare a variety of enjoyable meals simply.
With Fall’s arrival or in full swing, depending on where you live, I like to stock up on tubers — you know, our homegrown underground friends: yams, sweet potatoes and yes, peanuts, not to mention all the exotic potatoes one can get now. Have you tried the purple ones? Winter squash arrive soon and along with squash comes the mighty pumpkin.
Speaking of pumpkins…when selecting a pumpkin make sure to note there is a difference between a “carving” pumpkin and a “cooking” pumpkin. The carving pumpkins have a thin layer of flesh and the cooking pumpkins have a pulp so thick it would be impossible to carve into a Jack-O-Lantern.
I have included recipes that take advantage of these Autumn favorites and pair so well with the full line of Coleson’s Catch® frozen seafood products. A little background note: I’ve included a recipe that uses Port — a fortified wine. Port is usually used for sipping or as an after dinner drink (digestif). It is sweet so that it’s best paired with dessert and/or coffee. There are flavored Ports, too, like orange or chocolate. Most Port is imported from Portugal where it originated. However there are some very high quality American Ports available, if you’d rather buy “USA”.
So remember when things get hectic, rely on your pantry and freezer to come to the rescue. I think all of us buy things when they’re on sale even if we have no immediate need for them… and that’s how you can easily, economically and incrementally stock your pantry and freezer… then, when time is short it’s there for you.
