Flounder with Grapefruit and Mint

Ingredients

  • 12 oz pkg Coleson's Catch Flounder Fillets Marinade:
  • 1/2 c. fresh pink grapefruit juice
  • 1 tsp. grapefruit zest chopped
  • 1 Tbsp Shallots chopped
  • 1/4 c. mint leaves chopped
  • 1/4 tsp. Salt and Pepper

Instructions

  • Mix marinade ingredients.
  • Marinate flounder for at least one hour, turning occasionally. Grill.
  • Garnish with fresh pink grapefruit sections and chopped mint.

Seafood Stew

Servings 4 People

Ingredients

  • 4 c mix of Coleson’s Catch fish or shellfish cut into bite size pieces
  • 1 c White Beans cooked
  • 1 c Celery diced
  • 1 c Carrot diced
  • 1 c Onion diced
  • 4 c Chicken Broth
  • 1 c Ham diced
  • 2 tsp Thyme
  • Salt and Pepper

Instructions

  • Mix the diced vegetables, stock, ham and seasonings together and simmer until the vegetables are tender.
  • Add the seafood and beans and bring to a boil, simmer for 2 minutes.

Notes

This is a basic, simple, hearty winter stew which can be developed into a more complex one by simply adding some diced tomatoes and pesto.
Additional Comments: Yes, you can use ham hocks and water instead of stock and ham.

Simmered Cod Fillets with Basil and Purple Potatoes

Servings 2 People

Ingredients

  • 12 oz pkg Coleson’s Catch Cod Fillets
  • 1 c. Purple Potatoes diced
  • 1/2 c. Yellow Onion diced
  • 1/3 c. Celery diced 
  • 1/2 c. Carrot diced 
  • 1/3 c. Tomatoes diced 
  • 2 Tbsp garlic chopped
  • 3 Tbsp fresh basil chopped
  • 1/4 c. White Wine
  • 1 c. Chicken Broth
  • 1 Tbsp Butter
  • Salt and Pepper

Instructions

  • Sauté onion in a large sauté pan until translucent; add white wine and chicken broth, bring to a boil.
  • Add all non-fish ingredients and simmer until al dente. 
  • Season the Cod with salt and pepper.
  • Place on top of the vegetables and cover.
  • The Cod is typically thin so it will be done quickly.
  • Serve with bread and salad.

Cod Fillets with Sweet Potatoes

Ingredients

  • 12 oz pkg Coleson’s Catch Cod Fillets
  • 1 large Sweet Potato peeled and diced
  • 1/2 c. Yellow Onion diced
  • 1 lemon juiced
  • 1/2 tsp. Allspice
  • 1 Tbsp Oil
  • Salt and Pepper

Instructions

  • Toss the sweet potato, onion, 1/4 tsp allspice, oil, salt and pepper in a bowl then place on a sheet pan.
  • Bake at 400 degrees F until golden, about 20 minutes or so. 
  • Season the Cod with lemon, 1/4 tsp allspice, oil, salt and pepper and cook any way you desire (I broil it).
  • Serve Cod with Sweet Potato on the side with a fresh vegetable or salad.

Cod Fillets with Turnips and Greens

Ingredients

  • 1 pkg Coleson’s Catch Cod Fillets thawed
  • 1 bunch Fresh turnips with greens smaller turnips are better
  • 1/2 c. Carrot diced
  • 4 strips Bacon
  • 1/2 c. Red Onion diced
  • 1 Tbsp. garlic
  • 1/2 c. Chicken Broth
  • 2 bay leaves
  • 2 Tbsp. balsamic vinegar
  • 1/2 tsp. Thyme fresh if possible
  • Salt and Pepper

Instructions

  • If the turnips are small, cut off the top and cut into quarters, if bigger, dice them. Wash the leaves and chop.
  • Use 1 cup of turnip and 1 cup of the greens. 
  • Sauté bacon, remove from the fat.
  • Sauté onions in bacon grease until translucent.
  • Add the garlic and sauté lightly, don’t brown. 
  • Add the broth, root vegetables, thyme and bay leaves.
  • Cover and simmer until the vegetables are al dente.
  • Add the greens and cod, cover and steam for 3-5 minutes (depending on thickness of cod, but it is usually thin).
  • Remove cod and place in a serving dish.
  • Pour the mixture over the cod.
  • Top with the crumbled bacon and balsamic vinegar.
  • I don’t think it needs a side dish but you want one perhaps a baked potato.
