Seafood Stew
Servings 4 People
Ingredients
- 4 c mix of Coleson’s Catch fish or shellfish cut into bite size pieces
- 1 c White Beans cooked
- 1 c Celery diced
- 1 c Carrot diced
- 1 c Onion diced
- 4 c Chicken Broth
- 1 c Ham diced
- 2 tsp Thyme
- Salt and Pepper
Instructions
- Mix the diced vegetables, stock, ham and seasonings together and simmer until the vegetables are tender.
- Add the seafood and beans and bring to a boil, simmer for 2 minutes.
Notes
This is a basic, simple, hearty winter stew which can be developed into a more complex one by simply adding some diced tomatoes and pesto.
Additional Comments: Yes, you can use ham hocks and water instead of stock and ham.
