Flounder with Grapefruit and Mint
Servings 2 People
- 12 oz pkg Coleson's Catch Flounder Fillets Marinade:
- 1/2 c. fresh pink grapefruit juice
- 1 tsp. grapefruit zest chopped
- 1 Tbsp Shallots chopped
- 1/4 c. mint leaves chopped
- 1/4 tsp. Salt and Pepper
- Mix marinade ingredients.
- Marinate flounder for at least one hour, turning occasionally. Grill.
- Garnish with fresh pink grapefruit sections and chopped mint.
