Red Wine Vinegar and Sweet Red Onions
- 2 c Sweet Red Onion peeled and sliced (1/2 inch)
- Hearty Red Wine Vinegar enough to cover, high quality
- Salt and Pepper
- Place onions in a plastic container or jar and pour enough vinegar to cover onions.
- Add salt and pepper, seal and shake.
- Marinate for 48 hours, shaking it once or twice a day.
The onions are good on salads and sandwiches. The vinegar is really good in salad dressings and future marinades.
