Red Wine Vinegar and Sweet Red Onions

Ingredients

  • 2 c Sweet Red Onion peeled and sliced (1/2 inch)
  • Hearty Red Wine Vinegar enough to cover, high quality
  • Salt and Pepper

Instructions

  • Place onions in a plastic container or jar and pour enough vinegar to cover onions.
  • Add salt and pepper, seal and shake.
  • Marinate for 48 hours, shaking it once or twice a day.

Notes

The onions are good on salads and sandwiches. The vinegar is really good in salad dressings and future marinades.
