Tilapia with Apples and Kumquats

Ingredients

  • 12 oz pkg Coleson's Catch Tilapia Fillets
  • 1 c. Apples diced
  • 1/2 c. Carrots diced
  • 1/2 c. Celery diced
  • 3 Kumquats finely diced
  • 1/4 tsp. Thyme 1/4 tsp. Allspice
  • 1/4 c. Scallions sliced

Instructions

  • Toss the non-fish items together and place in a small glass casserole dish. 
  • Place the Tilapia on top and cover. 
  • Bake at 350 degrees for 20-30 minutes, depending on how soft you like your vegetables.
  • Suggested side dish would be a salad.

Sole with Lavender-Rosemary Sauce

Ingredients

  • 1 pkg Coleson's Catch Sole Fillets
  • 1/4 c. Sherry
  • 1 Tbsp. Garlic chopped
  • 1 Tbsp. Shallot or Red Onion chopped
  • 1 c. Heavy Cream
  • 1 tsp. Rosemary
  • 1 tsp. Lavender Blossoms*
  • 1/4 tsp. White Pepper
  • 4 Tbsp. Butter
  • 1 Tbsp. Lemon juice

Instructions

  • Simmer sherry, garlic, and shallot until liquid is almost gone. 
  • Add cream, rosemary, lavender blossoms, and pepper. 
  • Simmer the sauce for approximately 5 minutes then add butter and lemon juice. Simmer until it is the desired thickness.
  • Poach, bake, sauté, or broil the sole; top with sauce.

Notes

Lavender Blossoms can be found in spice section of specialty food stores; they can be substituted with rose petals or any sweet spice like basil.

Baked Sole with Lemon and Garlic

Baked Sole with Lemon and Garlic

Servings 2 People

Ingredients

  • 12 oz Coleson's Catch Sole Fillets
  • 1 Tbsp Garlic chopped 
  • 1 in Lemon cut half
  • 1/4 c. Red Onion chopped 
  • 1/2 c. Mushrooms sliced 
  • 1/2 c. Dry white wine
  • 1/4 c. Water
  • Olive Oil Salt and pepper

Instructions

  • Sprinkle the sole fillet with salt and pepper. Roll them up from short end and place in a baking dish.
  • Add garlic, red onion, mushrooms, white wine & water to the baking dish.
  • Brush the sole with olive oil.
  • Squeeze the juice of lemon over the rolls then place lemon in the baking dish (lemon rind adds a great flavor).
  • Cover with foil and bake at 400F for 15 minutes.  Remove lemon before serving
  • Serve with rice, pasta or mashed potatoes.

Fish with Macadamia Brown Butter

Servings 2 People

Ingredients

  • 1 pkg Coleson's Catch white fish of your choice
  • 1/2 c. Macadamia nuts diced & toasted
  • 1/2 c. Butter salted
  • 2 tsp. Parsley chopped 

Instructions

  • Melt the butter in a saucepan and cook over high heat while whisking until brown.
  • The toasted nuts and the brown butter make the most remarkable tasting sauce.
  • Any type of nut can be used.
  • Bake, pan fry, grill your choice of Coleson's Catch white mild fish.
  • Pour brown butter over cooked fish or serve on the side.

Perch with Onion Cream Sauce

Servings 2 People

Ingredients

  • 12 oz Coleson's Catch Perch cooked as desired
  • 2 Yellow or White Onions chopped, large
  • 2 Tbsp. Butter
  • 1/2 c. Dry White Wine 1/2 c. Chicken stock
  • 1/2 c. Heavy Cream or half & half
  • Salt and Pepper to taste

Instructions

  • Poach the perch in the wine, garlic, and salt. Watch carefully as it will cook quickly. Chill.
  • Combine onion, butter, and stock; simmer for 20 minutes.
  • Blend in a blender until smooth.
  • Put back on stove and add cream; heat through. 
  • Adjust thickness--if too thick add more stock, if too thin use roux.
  • Salt and pepper to taste.
