Tilapia with Apples and Kumquats

- 12 oz pkg Coleson's Catch Tilapia Fillets
- 1 c. Apples diced
- 1/2 c. Carrots diced
- 1/2 c. Celery diced
- 3 Kumquats finely diced
- 1/4 tsp. Thyme 1/4 tsp. Allspice
- 1/4 c. Scallions sliced
- Toss the non-fish items together and place in a small glass casserole dish.
- Place the Tilapia on top and cover.
- Bake at 350 degrees for 20-30 minutes, depending on how soft you like your vegetables.
- Suggested side dish would be a salad.
