Prawns in Coconut Milk

Course Appetizer
Servings 2 People

Ingredients

  • 12 pcs Coleson's Catch Raw Black Tiger Prawns 16/20 peeled & seasoned with salt and pepper
  • 1/2 c Red Onions diced
  • 1 Tbsp coconut oil
  • 2 Tbsp Mint chopped
  • 2 Tbsp Basil chopped
  • Juice and zest of one lime
  • 1/2 c Coconut Milk
  • 1/2 tsp Red Chili Flakes crushed

Instructions

  • Sauté the onion in the oil.
  • Add all ingredients except prawns and simmer for a few minutes.
  • Add the prawns and simmer until the prawns are cooked, just a few minutes.

Notes

Serve with white rice.

Cajun-style Prawn Broil

Cajun-style Prawn Broil

Course Appetizer

Ingredients

  • 12 oz Head off Shell-On Large Prawns 
  • 1 lemon
  • 1 large onion diced
  • 4 Cups Water
  • 2-3 Tbsp. of your favorite brand of Shrimp or Crab or Seafood Boil Seasoning

Instructions

  • Thaw prawns under cold running water.
  • Bring water to a boil, then add the seasonings, onion and juice of the lemon.
  • Add the Shell-On Shrimp and let boil for about 3-5 minutes.
  • Remove from the pot and allow to cool.

Notes

For a complete Cajun meal, serve with boiled red potatoes and corn on the cob.

Baked Prawns

Baked Prawns

Course Appetizer

Servings 2 People

Ingredients

  • 12 pcs Coleson's Catch Raw Black Tiger Prawns 16/20 peeled and split down the back so they lay flat
  • 1 c Italian style bread crumbs
  • 2 Tbsp of Garlic minced
  • 1/4 c Onion finely diced
  • 1/2 c melted butter or olive oil
  • 1/2 c Parmesan cheese
  • 1/4 c Parsley chopped
  • lemon to garnish

Instructions

  • Sauté the onions and garlic in the butter or oil and toss with the bread crumbs.
  • In an oiled glass casserole dish lay the prawns side by side.
  • Fill the backs of the prawns with the bread crumb mixture.
  • If there is any extra breadcrumb mixture, sprinkle over the top.
  • Sprinkle with the Parmesan cheese and bake in a 375 oven for 15 minutes.
  • Top with the chopped parsley and garnish with lemon.

Notes

This dish makes a nice summer supper served with a salad.

Bacon Scallop Skewers

Bacon Scallop Skewers

Ingredients

  • Sea scallops
  • Sliced bacon

Instructions

  • For my taste it is sufficient to wrap every other scallop on the stick.
  • Use half a strip of bacon for each scallop you wrap.
  • Cook the bacon they way you normally would.
  • Crisp but not extra crisp and while the bacon is hot, wrap it around the raw scallop.
  • Put the bacon wrapped scallop on the stick and sprinkle with salt and pepper.
  • Chill.

Notes

Scallops are the most delicate of shellfish. If left to itself, it can be almost tasteless. It is also very lean. When teamed with bacon it creates a rich savory morsel, which is top on most people's list. Put them over on open flame and wow!

Classic Fresh Mozzarella Salad

Course Salad
Servings 2

Ingredients

  • A large crisp green leaf lettuce leaf
  • 3 Thick slices Ripe Tomato
  • 3 Thick slices Mozzarella cheese
  • A generous sprinkle of salt and pepper
  • 6 Large leaves Basil sliced very thinly
  • A generous splash of extra virgin olive oil

Instructions

  • Mix all ingredients.

Notes

Variations: Sliced red onion, feta cheese, Kalamata olives, a splash of balsamic vinegar, a squeeze of lemon.
Additional Comments: Serving suggestion:
Cold poached salmon, halibut, scallops or calamari steaks could accompany this salad, as could a cold broiled swordfish steak.
