Salmon with Orange and Ginger Marinade

Servings 2 People

Ingredients

  • 12 oz Colesons Catch Salmon Fillets or Steaks
  • 1/4 c Orange Juice
  • 1/2 tsp Orange Zest
  • 1 tsp Ginger freshly grated 
  • Pinch of Black Pepper
  • Salt
  • olive oil

Instructions

  • Marinate salmon in orange juice, zest, ginger and pepper for at least an hour.
  • Sprinkle with salt and brush with oil; cook over an open flame or in a hot oven or broiler.

Simple Tasty Salmon Steaks with Mustard Baby Potatoes

Servings 2 People

Ingredients

  • 1 pkg Coleson's Catch Salmon Steaks
  • 6-8 pcs Baby Red Potatoes parboiled
  • 1 Tbsp Whole Grain Mustard
  • 1/4 c Onion Diced
  • 1/4 c Celery Diced
  • lemon
  • water
  • Salt and Pepper to taste
  • Cooking Instructions:

Instructions

  • Sprinkle salt and pepper on the salmon and squeeze lemon over it. 
  • Place the parboiled potatoes in to a bowl and toss in onions and celery with a couple of spoons of water to help it all blend.
  • Then wrap completely in tin foil.
  • Put the foil packet either in the coals or on the grill, whichever you are comfortable with.
  • When the potatoes are done (20-30 minutes), cook the salmon.

Salmon Steaks with Lime and Crushed Red Chilies

Servings 2 People

Ingredients

  • 1 pkg Coleson's Catch Salmon Steaks
  • 2 Tbsp Lime Juice
  • 1/4 tsp Red Crushed Chilies
  • 1/4 c Red Onion Diced
  • 1 /2 tsp garlic Chopped
  • 2 tsp fresh basil Chopped
  • Salt and Pepper
  • 6 Sliced Green Olive stuffed with Pimento

Instructions

  • In a shallow container or a zip lock bag, put everything in except the olives.
  • Marinate for at least an hour.
  • Cook the Salmon Steaks over an open flame- cooking time depends on the source of flame used and size of steak. (See comments below.)
  • Top the steak with cold olives and serve with a salad.

Notes

This might be a good time to bring up the 7 minutes an inch concept. As a rule of thumb when cooking fish in high heat, the steak that is 1 inch thick it will take 7 minutes to cook - that is 3-1/2 minutes per side. That is how quickly fish cooks and why most people overcook it. If cooking in a 350 degree F oven, it will take longer.

Salmon Steaks with Dry Rub

Servings 2 People

Ingredients

  • 1 pkg Coleson's Catch Salmon Steaks
  • 1 tsp seasoning salt
  • Pinch of each of the following: Black pepper, whole thyme, allspice, chili powder, curry powder, paprika, dill weed, dry mustard and celery seed.

Instructions

  • Mix all spices and place on a plate.
  • Right before cooking, press both sides of the steak into the seasoning mix.
  • If you leave to marinate overnight, the salt leeches out the juice.
  • Cook Salmon Steaks over an open flame.
  • Serve with lemon and a side salad.

Salmon Steaks with Fennel Butter

Servings 2 People

Ingredients

  • 1 pkg Coleson's Catch Salmon Steaks
  • 1 stalk Fresh Fennel
  • 1/4 c salted butter
  • 1/4 tsp Fennel Seed
  • 1/2 tsp Lemon Juice
  • pepper

Instructions

  • The day before using, cook the fennel any way until soft - sauté, steam or roast it.
  • Chop cooked fennel finely and chill.
  • Bring butter to room temp and soften in a bowl by stirring.
  • Add other ingredients and mix.
  • Using a piece of wax paper make the butter compound into a long strip and roll into a tube, chill.
  • Cook salmon over an open flame and top with slices of the chilled compound butter.
  • Serve with a salad.
