Tilapia with Watermelon
Servings 2 People
- 12 oz pkg Coleson's Catch Tilapia Fillets
- 1/2 c. Watermelon diced
- 1/4 c. Green Onion sliced
- 1/4 c. Red Onion diced
- 2 Tbsp red wine vinegar
- Salt and Pepper
- Mix all the non-fish ingredients and chill.
- Season the Tilapia with salt and pepper and cook the way you desire (I bake it).
- Top with the melon mixture.
- I serve it with non-mayonnaise based coleslaw.
