Creamy Pesto Swordfish Enchiladas

Ingredients

  • 1 pkg Coleson's Catch Swordfish thawed
  • 8-10 Corn Tortillas depending on how you like your filling to-tortilla ratio
  • 2 c Half and half
  • 2 Tbsp Roux
  • 1/4 c Pesto:
  • 1 c Roasted Tomatoes diced
  • 1+ c Provolone Cheese grated
  • Salt and Pepper

Instructions

  • Cook the swordfish in any fashion; over an open flame adds great flavor to this hearty fish. Cool and dice.
  • Heat the half & half to a simmer and add the Roux, whisk until smooth and slightly thick.
  • Stir in Pesto and cool to lukewarm.
  • To assemble: Put some sauce on a plate and place the tortilla in the sauce and turn over to cover both sides with sauce.
  • Sprinkle some of the Swordfish, Roasted Tomatoes and Cheese down the center and roll it up.
  • Place in a square, greased glass baking dish.
  • Repeat the process until the filling is gone.
  • Spread the leftover sauce and cheese over the top; save a few tomatoes to sprinkle on top later for color.
  • Cover with foil and bake at 350 for 30 minutes.
  • Serve with Garlic Bread and Salad.

Swordfish with Orange Ginger Carrots

Ingredients

  • 1 pkg Coleson's Catch Swordfish Steaks
  • 2 c sliced carrots
  • 2/3 c Orange Juice
  • 1 tsp grated fresh ginger pinch if using powdered
  • 1 Tsp Soy Sauce
  • splash sesame oil

Instructions

  • In a covered saucepan, simmer the carrots in orange juice and ginger until tender.
  • Add soy sauce and sesame oil.
  • Cook the swordfish any style--broiled is great.

Notes

Serve with the carrots and with steamed rice.

Baked Swordfish with Barbeque Sauce

Ingredients

  • 1 pkg Coleson's Catch Swordfish Steaks
  • Your favorite Barbeque sauce Homemade or store-bought
  • Your favorite black beans
  • corn

Instructions

  • Marinate the swordfish overnight in the barbeque sauce.
  • Place in a baking dish and top with barbeque sauce.
  • Bake in a 425° oven for 15 minutes.
  • Serve with black beans and corn or corn bread.

Swordfish and Mushroom Kebabs

Ingredients

  • 1 pkg Coleson's Catch Swordfish
  • 12 Crimini Mushrooms small
  • 12 basil leaves
  • 1 Red Onion
  • 1 Tbsp garlic chopped
  • 2 Tbsp balsamic vinegar
  • 2 Tbsp Extra Virgin Olive Oil
  • 1/2 c Tomatoes diced and salted
  • Salt and Pepper

Instructions

  • Cut ingredients so all items will be similar size. The key is to have everything finish cooking at the same time.
  • You have probably been at barbeques where you were served a beautiful kebab with half the items either over- or underdone. You don't want to do that.
  • The swordfish should be cut into squares at least as big as the mushrooms.
  • You want the onion not wider than the other items--ideally all items have contact to the heat source.
  • Cherry tomatoes are cute but they cook fast and fall off which is they are best put on top--plus the cold contrast is great. Depending on how long your skewers are, alternate the items.
  • Mushroom, onion, basil, swordfish, basil, onion, mushroom is a tasty pattern.
  • Mix the vinegar, oil, garlic, salt, and pepper together and marinate the kebabs for a minimum of 4 hours, turning often.
  • Cook over an open flame.

Notes

Serve on a bed of rice and top with the tomatoes.

Sweet Potato Swordfish Bake

Servings 2 People

Ingredients

  • 1 pkg Coleson's Catch Swordfish
  • 1 c Sweet Potato peeled diced
  • 1/2 c Celery diced
  • 1/2 c Onion diced
  • 1/2 tsp Thyme
  • olive oil
  • Salt and Pepper

Instructions

  • Toss all ingredients except the swordfish and spread on a sheet pan.
  • Bake at 400F for 15 minutes.
  • Season the swordfish and add to the sheet pan; continue to cook until the swordfish is done and the sweet potato tender, approximately 10 minutes.
