Honey Tabasco Swordfish Skewers

Ingredients

  • 1 lb boneless skinless swordfish
  • 1/4 c Honey
  • 2 Tbsp Tabasco sauce
  • 1/4 c barbeque sauce
  • 1 Yellow Onion

Instructions

  • Cut the swordfish into squares.
  • Cut the onion into strips a bit smaller than the fish and put on the stick in an onion, fish and onion pattern.
  • Mix the other ingredients together and marinate the skewers overnight.

Swordfish with Spicy Eggplant

Ingredients

  • 12 oz Coleson's Catch Swordfish Steaks marinated
  • Marinade for Swordfish:
  • 1 tsp. chopped garlic
  • 1 tsp. chopped basil
  • 2 Tbsp. White Wine
  • 1 Tbsp. olive oil
  • Spicy Eggplant:
  • 2 Eggplant diced
  • 1 Onion
  • 2 Tbsp. chopped basil
  • 2 Tbsp. chopped garlic
  • 1/2 tsp. crushed chilies
  • 1/2 tsp. Salt
  • 1/2 tsp. pepper

Instructions

  • Marinate Swordfish.
  • For eggplant, sauté all ingredients in 1/4 c. olive oil until completely cooked, approximately 20 minutes.
  • Add 1/4 to 1/2 c. chicken stock.

Swordfish with Pesto Aioli

Ingredients

  • 1 pkg Coleson's Catch Swordfish Steaks
  • 3 egg yolks
  • 2 Tbsp. garlic chopped
  • 1/4 c. fresh basil chopped
  • 2 Tbsp. pine nuts
  • 2 Tbsp. Parmesan cheese
  • 1 c. olive oil
  • Salt and Pepper

Instructions

  • Place all ingredients except olive oil and swordfish into a blender.
  • Turn the blender on low and slowly add olive oil.
  • Adjust salt and pepper to taste.
  • Marinate swordfish in basil, garlic, and olive oil. Broil.

Swordfish with Cucumber Salsa

Servings 2 People

Ingredients

  • 1 pkg . Coleson's Catch Swordfish Steaks
  • 1/2 cup Red Bell Pepper diced
  • 1/2 cup Cucumber (peeled, seeded, and diced)
  • 1/2 Red Onion diced
  • 2 tbsp. chopped fresh dill, juice of one lime
  • Salt and Pepper to taste

Instructions

  • Cook swordfish as desired and top with Cucumber Salsa.
  • Salsa preparation: Combine bell pepper, cucumber, onion, dill and lime juice.
  • Salt and pepper to taste.
