Jamaican Jerk Prawn Stew
Servings 2 People
Ingredients
- 2 lbs prawns peeled
- 3 c Chicken Broth
- 1/2 c Scallion chopped
- 3 Tbsp Fresh Ginger grated
- 1/2 tsp Ground Allspice
- 1/2 c Red Bell Pepper finely diced
- 1/2 c Carrot finely diced
- 1 habanero pepper
- 2 Tbsp Worcestershire sauce
- 1/2 tsp Black Pepper
- 2/3 c rice
Instructions
- Put all ingredients except the prawns in a large pot and simmer for 20 minutes.
- Add the prawns and simmer for 5 minutes.
- Remove the habanero pepper before serving.
Notes
A light coleslaw is a nice side dish.

Hot Avocados Stuffed with Imitation Crab Meat
Servings 4 People
Ingredients
- 3 C Coleson's Catch Imitation Crab Meat Salad Chunks
- 2 Tbsp Butter
- 1/2 c Onion diced
- 2 Tbsp Flour
- 1 c hot milk
- 1/2 Tsp Worcestershire sauce
- 2 Tbsp Cilantro diced
- 1/4 Tsp Salt
- 1/4 Tsp pepper
- 3 avocados
- 3/4 c jack and cheddar cheese mix
Instructions
- Melt the butter and saute the onion, stir in the flour and add the milk.
- Stir until thick Add seasoning, cilantro and the imitation crab.
- Cut the avocados in half and remove the seeds.
- Fill the centers with the mixture and sprinkle with the cheese.
- Place in a well- greased baking dish and bake for 20-25 minutes at 350F.

Ingredients
- 1 pkg. Coleson’s Catch Tuna Steaks
- 2 tbsp grated ginger
- 2 tbsp chopped green onion
- 2 tbsp chopped red bell pepper
- 1 tsp Allspice
- 1/2 tsp crushed chili
- 2 tbsp Worcestershire sauce
- 2 tbsp Soy Sauce
- 1 tsp Thyme
- Salt and Pepper
Instructions
- Marinate the Tuna in all the ingredients for 24 hours.
- Cook over an open flame or under the broiler.
Notes
Don't cook more than to medium! Rare is better.

St. Andrews Barbecue Sauce For Salmon
Ingredients
- 1 Tbsp. butter
- 4 oz. chopped onion
- 1 Tbsp. minced garlic
- 2 Tbsp. chili powder
- 1 Tbsp. minced jalapeno pepper
- 4 oz. coffee
- 4 oz. Worcestershire sauce
- 4 oz. tomato paste
- 2 oz. apple cider vinegar
- 2 oz. brown sugar
- 2 Tbsp. apple cider stock as needed
Instructions
- Heat the butter in a saucepan over medium heat.
- Add the onion and garlic and saute for two or three minutes until an aroma is apparent.
- Add the chili powder and jalapenos.
- Sauté the mixture for another 30 to 45 seconds.
- Add the coffee, Worcestershire Sauce, tomato paste, vinegar, brown sugar, and cider.
- Simmer for 20 minutes, adding stock if needed, until it is somewhat thickened.
- Keep warm until needed.
