Jamaican Jerk Marinated Tuna

Ingredients

  • 1 pkg. Coleson’s Catch Tuna Steaks
  • 2 tbsp grated ginger
  • 2 tbsp chopped green onion
  • 2 tbsp chopped red bell pepper
  • 1 tsp Allspice
  • 1/2 tsp crushed chili
  • 2 tbsp Worcestershire sauce
  • 2 tbsp Soy Sauce
  • 1 tsp Thyme
  • Salt and Pepper

Instructions

  • Marinate the Tuna in all the ingredients for 24 hours.
  • Cook over an open flame or under the broiler.

Notes

Don't cook more than to medium! Rare is better.

Swordfish with Braised Cabbage

Ingredients

  • 4 Coleson's Catch Swordfish Steaks
  • 8 cups finely shredded red cabbage
  • 1/4 cup minced shallots
  • 2 Tbsp. minced garlic
  • 1 Tbsp. ground juniper berry   may substitute caraway or fennel seed
  • 1 tsp. Thyme
  • 2 Tbsp. Oil
  • 3/4 cup red wine
  • 2 Tbsp. Cornstarch

Instructions

  • Season the fish with salt and pepper, sear in a hot pan and place in a glass baking dish.
  • Sauté the shallots and garlic in the oil and add the cabbage, juniper, thyme and wine.
  • Cook, covered, until the cabbage is tender, stirring often.
  • The cabbage may release a lot of liquid.
  • If there is too much liquid, continue to cook until it reduces, or pour some off.
  • If it is a bit dry, add water.
  • Add salt and pepper to taste.
  • Stir a bit of water into the cornstarch and add to dish to thicken.
  • Pour over the swordfish and cover.
  • Bake at 400° for 20 minutes.

Notes

Serving Suggestions: Serve with roasted Yukon Gold potatoes. Additional Comments: This delicious, healthy and easy to prepare recipe is also excellent for other Coleson's Catch® seafood items like Halibut, Tuna, Mahi-Mahi, Chilean Sea Bass, Swordfish, Orange Roughy and Tilapia. Enjoy!

Sweet Potato Swordfish Bake

Ingredients

  • 1 pkg Coleson's Catch Swordfish
  • 1 c Sweet Potato peeled diced
  • 1/2 c Celery diced
  • 1/2 c Onion diced
  • 1/2 tsp Thyme
  • olive oil
  • Salt and Pepper

Instructions

  • Toss all ingredients except the swordfish and spread on a sheet pan.
  • Bake at 400F for 15 minutes.
  • Season the swordfish and add to the sheet pan; continue to cook until the swordfish is done and the sweet potato tender, approximately 10 minutes.

  • 1 pkg Coleson’s Catch Salmon Fillets
  • 1 Tbsp. Butter
  • 1 can Coconut Milk
  • 3 c. Chicken Stock
  • 1/2 c. Green Onions thinly sliced
  • 1/2 c. Red Bell Pepper diced
  • 12 oz. raw or cooked salmon diced
  • 1 c. kernel corn
  • 1 tsp. Thyme
  • 1/2 tsp. Black Pepper

Instructions

  • Simmer ingredients for 20 to 30 minutes. It's soup!

Orange and Caramelized Onion-Flavoured Salmon Fillet

Servings 2 People

Ingredients

  • 1 pkg Coleson’s Catch Salmon Fillets
  • 1 Onion thinly sliced
  • 1/4 tsp. Thyme
  • 1 c. Orange Juice
  • 1/2 cup White Wine
  • Salt and Pepper to taste

Instructions

  • Cook Salmon as desired (refer to suggestions on cooking instructions) and top with sauce.
  • Sauce preparation:
  • Saute onions until brown, add thyme, orange juice and white wine and simmer for a few minutes.
  • Thicken with roux (melted butter mixed with flour to make a paste), and add salt and pepper as desired.
