Imitation Crab Flake Pinwheel Wrap

Ingredients

  • 12 oz pkg. Coleson's Catch Imitation Crab Flakes
  • 8 oz cream cheese
  • 1/4 c ranch dressing mix powder
  • 1 Red Bell Pepper
  • 2 Tbsp Lemon Juice
  • 1/4 tsp Salt and Pepper
  • 1 Red Onion thinly sliced
  • 2 c alfalfa sprouts
  • 2 c Tomatoes diced
  • 6 or more tortillas depending on size pick your favorite flavor

Instructions

  • Mix cream cheese, ranch dressing powder mix, lemon juice, salt and pepper in a food processor.
  • To assemble cover the entire tortilla surface with the cream cheese mixture.
  • Sprinkle with the crab flake, red onion, tomato and sprouts. Roll tightly.
  • Make them all and place on a sheet pan and chill.
  • When ready to use slice about an inch thick and place on its side on a plate.

Notes

If transporting, make the slices on location.

Caper Tartar Imitation Crab Submarine Sandwich

Ingredients

  • 12 oz Coleson's Catch Imitation Crab Meat flakes
  • Tartar ingredients:
  • 1/2 c Mayonnaise
  • 2 Tbsp Red Onion diced
  • 2 Tbsp capers 
  • 2 Tbsp pickle relish
  • 1 Tbsp Lemon Juice
  • 1/4 tsp Salt and Pepper
  • Sandwich ingredients:
  • 4 Sub rolls
  • 8 slices Tomatoes
  • Iceberg Lettuce shredded
  • Cheese of choice

Instructions

  • Flake the crab meat into smaller pieces and mix with the tartar sauce.
  • Assemble the sandwiches.
  • Add any other favorite sub ingredient.

Notes

Wrap tightly in plastic wrap if you are going to transport. These hold up well in an ice chest.

Servings 4 People

Ingredients

  • 3 lbs. Coleson's Catch King Crab Legs or assorted firm fish and shellfish (crab prawns, mussels, clams, squid, chilean sea bass)
  • 1 Yellow Onion diced
  • 1/4 c. combination of fresh basil thyme and oregano
  • 3 bay leaves
  • 1 c. red wine
  • 1/2 c. tomato paste
  • 1 Carrot diced
  • 4 qt. canned tomatoes diced
  • 1 c. clam juice or chicken stock
  • Salt and Pepper

Instructions

  • Combine all ingredients except fish in a heavy pan. Simmer for at least one hour.
  • If you wish to reduce the acidity caused by the tomato paste, add two tablespoons of granulated sugar before adding fish.
  • Use a combination of fish that suits your taste.
  • If you don't want to struggle with the shells of the prawns and crab, peel them before cooking. The items suggested above hold up well.
  • Cut fish into pieces similar in size to prawns to allow all to cook in approximately the same amount of time.
  • Fish should cook in 10-15 minutes.
  • Do not overcook.

Notes

Serve in either individual bowls or in a tureen. Serve garlic bread or garlic cheese bread as an accompaniment.

Angel Hair Pasta Salad With Mussel Meat

Ingredients

  • 12 oz pkg Coleson's Catch Mussel Meat
  • 12 oz dry angel hair pasta
  • 1/2 C white wine vinegar
  • 1/2 C olive oil
  • 2 Tbsp garlic chopped
  • 2 Tbsp Stone Ground Mustard
  • 1/4 tsp Salt and Pepper
  • 1/2 C Red Bell Pepper chopped
  • 1/2 C Green Bell Pepper chopped
  • 1/2 C Red Onion diced
  • 1/2 C Celery diced
  • 1/2 C Olives sliced

Instructions

  • Cook the pasta according to package instructions.
  • Mix the vinegar, oil, garlic, mustard, salt, and pepper and whisk to form a dressing.
  • Combine all other ingredients and chill overnight.

Notes

Serve on a bed of shredded lettuce and garnish with lemon.

Ingredients

  • 1 c Coleson's Catch Mussel Meat
  • 3 c Linguini cooked
  • 1/2 c Red Onion diced
  • 1 c Tomatoes diced 
  • 1/4 c capers 
  • 1/2 c Kalamata Olives chopped 
  • 1/3 c white wine vinegar
  • 1 c olive oil
  • 2 Tbsp garlic chopped 
  • 1/4 c Basil chopped 
  • 1 c Feta Cheese crumbled 
  • Salt and Pepper

Instructions

  • Mix all ingredients and let it sit for at least 4 hours. Overnight is best.
