Angel Hair Pasta Salad With Mussel Meat
Servings 2 People
- 12 oz pkg Coleson's Catch Mussel Meat
- 12 oz dry angel hair pasta
- 1/2 C white wine vinegar
- 1/2 C olive oil
- 2 Tbsp garlic chopped
- 2 Tbsp Stone Ground Mustard
- 1/4 tsp Salt and Pepper
- 1/2 C Red Bell Pepper chopped
- 1/2 C Green Bell Pepper chopped
- 1/2 C Red Onion diced
- 1/2 C Celery diced
- 1/2 C Olives sliced
- Cook the pasta according to package instructions.
- Mix the vinegar, oil, garlic, mustard, salt, and pepper and whisk to form a dressing.
- Combine all other ingredients and chill overnight.
Serve on a bed of shredded lettuce and garnish with lemon.
