Imitation Crabmeat Flakes Au Gratin

Ingredients

  • 8 oz Coleson's Catch Imitation Crab Meat flakes or chunks
  • 1 c. Half and half
  • 1/4 c. Onion finely minced
  • 1/4 c. Sherry
  • 1/2 c. Mushrooms sliced
  • Roux or cornstarch
  • 2/3 c. Cheddar Cheese shredded
  • 1/4 c. Breadcrumbs

Instructions

  • Heat the sherry, onions and mushrooms until the sherry is almost gone.
  • Add half and half, then scald and thicken with roux or cornstarch.
  • Simmer for a few minutes. It should be thicker than a sauce.
  • Add imitation crabmeat flakes and place mixture in a casserole dish, topping it with the cheese and breadcrumbs.
  • Bake for 20 minutes at 350° or until bubbling hot.
  • Serving over steamed rice or pasta.

Italian Tomato Imitation Crab Meat Legs Bake

Ingredients

  • 16 oz pkg Coleson's Catch Imitation Crab Meat legs
  • 2 Tbsp olive oil
  • 1/2 C Onion diced
  • 2 Tbsp garlic chopped
  • 2 C diced tomatoes canned or fresh
  • 1/4 C fresh basil chopped (1 tsp dry)
  • 2 Tbsp Italian seasoning
  • 2 C Spinach shredded
  • 1 C crumbled blue cheese (for those who don't like blue cheese use provolone)

Instructions

  • In a saucepan, sauté the onion in the oil, add garlic, tomatoes, seasonings, and spinach.
  • Simmer for 20 minutes.
  • Add salt and pepper if needed.
  • Place the legs in a casserole dish and top with tomato sauce.
  • Sprinkle with cheese and bake for 20 minutes at 375.

Mussel and Chorizo Filo Bundle

Ingredients

  • 12 oz Coleson's Catch Mussel Meat
  • 8 oz. Chorizo sausage
  • 1/4 cup Cilantro chopped
  • 1/4 cup Onion diced
  • 1/4 cup Red Bell Pepper diced
  • 1 package frozen filo dough

Instructions

  • Take the chorizo out of the casing and crumble it up.
  • Saute it with the onions, bell peppers and cilantro; drain off fat. Cool the mixture.
  • Put a mussel on one corner of a 6" x 6" square of filo; place a mound of Chorizo mixture on top and roll forward, tucking in the "wings" of the dough as you go.
  • Repeat with remaining mussels, mixture, and filo.
  • Place on a cookie sheet and drizzle with melted butter.
  • Bake at 400° for 15 minutes or until brown.

Seafood Saffron Rice Bake

Ingredients

  • 6 pcs Coleson's Catch Mussel Meat
  • 6 pcs Coleson's Catch Head off Shell on Shrimp
  • 2/3 c Coleson's Catch Sea Bass diced
  • 1 c rice
  • 1/2 c Onion diced
  • 1/2 c Celery diced
  • 1/2 c Tomato diced 
  • 2 Tbsp garlic diced 
  • 1/2 tsp Saffron
  • 2 c Chicken Broth
  • 1/4 c Parsley chopped 

Instructions

  • Sauté the onion, celery and garlic in a casserole.
  • Add the tomato, saffron and chicken broth. Bring to a boil.
  • Add the rice and the seafood; stir, cover and bake at 400° for 30 minutes.
  • When done, fluff the rice and toss in the chopped parsley.

Thai Mussels in the Shell

Ingredients

  • 1 box Coleson's Catch Pacific Delight Greenshell Mussels in Half Shell
  • 1 Onion finely diced
  • 1 Green Bell Pepper finely diced
  • 1 Red Bell Pepper finely diced
  • 1/4 cup chopped mint
  • 2 Tbsp. Lemon Zest
  • 2 Tbsp. Soy Sauce
  • 1/2 cup plum sauce
  • 2 Tbsp. Sesame Oil
  • 1/2 tsp. crushed red chilies 
  • 1/2 cup diced roasted peanuts

Instructions

  • Sauté the onion and bell peppers in a bit of oil (corn, peanut or canola) until tender.
  • Add the other ingredients except peanuts.
  • Heat through and simmer for a couple of minutes.
  • If it is real thick add a bit of water, if it seems too thin let it cook down until it is not watery. Cool.
  • Spoon a mound of the seasoned vegetables on to each mussel.
  • Sprinkle with the peanuts and heat in oven at 350° for 15 minutes.
