Italian Tomato Imitation Crab Meat Legs Bake

- 16 oz pkg Coleson's Catch Imitation Crab Meat legs
- 2 Tbsp olive oil
- 1/2 C Onion diced
- 2 Tbsp garlic chopped
- 2 C diced tomatoes canned or fresh
- 1/4 C fresh basil chopped (1 tsp dry)
- 2 Tbsp Italian seasoning
- 2 C Spinach shredded
- 1 C crumbled blue cheese (for those who don't like blue cheese use provolone)
- In a saucepan, sauté the onion in the oil, add garlic, tomatoes, seasonings, and spinach.
- Simmer for 20 minutes.
- Add salt and pepper if needed.
- Place the legs in a casserole dish and top with tomato sauce.
- Sprinkle with cheese and bake for 20 minutes at 375.
