Foil Baked Trout

Servings 4 People

Ingredients

  • 4 Coleson's Catch Trout dressed
  • 1 Red Onion sliced
  • 1 stalk celery thinly sliced
  • 1 small bell pepper finely chopped, a nice fresh Anaheim pepper would be great if available
  • 1/2 cup White Wine
  • 4 tbsp Lemon Juice
  • 1 tsp Thyme
  • 1/2 tsp crushed red chilies  optional
  • Salt and Pepper

Instructions

  • Mix all ingredients. 
  • Place each trout on its own piece of oiled foil large enough to wrap and seal it. 
  • Spoon the mixed ingredients on the trout and seal. 
  • Place in a baking pan and bake for 20 minutes in a 400 degree oven.

Notes

Serve in the foil, allowing everyone to open their own and enjoy the juice and veggies.

Cajun Tilapia Fillets with Corn Salsa

Servings 2 People

Ingredients

  • 12 oz pkg Coleson's Catch Tilapia Fillets
  • 3 Tbsp Cajun seasoning*
  • Salt and Pepper
  • Salsa Ingredients:
  • 3/4 c. corn
  • 1/4 c. Red Bell Pepper diced
  • 1/4 c. Green Onion sliced
  • 1 Tbsp Vinegar
  • 1 Tbsp Lemon Juice
  • 1 Tbsp Fresh Cilantro chopped

Instructions

  • Mix the salsa ingredients together and chill over night. 
  • Sprinkle salt and pepper on both sides of the Tilapia fillets and generously coat both sides with Cajun seasoning. 
  • Saute to a golden brown and top with the salsa.

Poached Tilapia

Ingredients

  • 12 oz pkg Coleson's Catch Tilapia Fillets
  • 1 c. water
  • 1 Tbsp Pickling spice
  • 1/2 c. Onion diced
  • 1 Tbsp Lemon Juice
  • Salt

Instructions

  • In a large bottom pan, (enough to accommodate the fillets side by side) boil the water with the onion, lemon and seasonings. 
  • Add the fillets and simmer for 4-6 minutes depending on thickness. 
  • Remove and cool.

Notes

The broth can be saved for future poaching or used to make soup.

Pan Fried Tilapia with Almonds

Servings 2 People

Ingredients

  • 12 oz pkg Coleson's Catch Tilapia Fillets thawed
  • olive oil
  • Lemon Juice
  • Ground Cumin
  • Salt and Pepper
  • Almonds

Instructions

  • Generously coat skillet with olive oil.  Heat over medium heat. 
  • Add the Tilapia so that each piece is flat in the pan (uncovered).
  • Squeeze lemon juice evenly over Tilapia Fillets.  Shake salt and pepper as desired over each piece. 
  • Shake cumin so that each piece is evenly coated.  Cook 4 minutes and then flip each fillet. 
  • Repeat lemon juice, salt & pepper and cumin. 
  • When Tilapia is cooked through, each side should be white and flaky. 
  • With two minutes left, add sliced almonds as desired over each piece. 
  • Place the lid on the skillet (should be the size that covers all of the Tilapia). 
  • Let steam for the last 2 minutes of cooking.
  • Uncover and with a spatula, transfer to plates.

Notes

Serve with rice, a vegetable and/or salad.

Tilapia Fish Tacos

Servings 2 People

Ingredients

  • 12 oz pkg Coleson's Catch Tilapia thawed
  • Marinade #1 
  • 2 tsp. Chili Powder
  • 1 tsp. garlic chopped
  • 1 Tbsp Lemon Juice
  • 1 tsp. Italian seasoning
  • Salt and pepper Marinade #2
  • 2 tsp. Cajun seasoning*
  • 1 tsp. garlic chopped
  • 1 Tbsp Lime Juice
  • Salt and Pepper

Instructions

  • Since the Tilapia has a nice flavor on its own you can just season it with lemon, garlic, salt and pepper and the flavor is great.
  • If you want a big bold flavor try the chili-powder or Cajun marinades.
  • With the bolder marinades, I find I don't need salsa, just vegetables and cheese.
  • I like to marinate the fish for at least 8 hours, bake the fish fillets whole, and then cut them after they are cooked.
  • Serve the tacos with your favorite garnishes.
