Cod and Spinach Rolls

Ingredients

  • 12 oz pkg Coleson’s Catch Cod Fillets
  • 2 c. Spinach Leaves
  • 1/2 c. Yellow Onion diced 
  • 2 Tbsp. Butter
  • 1 tsp. garlic chopped
  • 1/4 tsp. Nutmeg
  • 1/2 c. dry sherry
  • Salt and Pepper

Instructions

  • Line each fillets with as much spinach as you can and roll.
  • If this is too tedious you can layer like lasagna.
  • Place side by side-touching-in a glass casserole dish. 
  • Sauté the onion until clear add garlic a cook but don’t brown.
  • Add sherry and nutmeg and bring to a boil.
  • Pour over the cod/spinach, cover and bake at 350 degrees F. for 20-30 minutes.
  • Serve with rice or pasta.

Cod Fillets with Ginger and Broccoli

Ingredients

  • 12 oz pkg Coleson’s Catch Cod Fillets
  • 1 1/2 c. Broccoli florets blanched 
  • 1 Tbsp. Canola oil
  • 1 Tbsp. garlic chopped
  • 2 Tbsp. Ginger grated
  • 2 Tbsp. Soy Sauce
  • 2/3 c. Chicken Broth
  • 1 Tbsp. Sesame Oil
  • 1 Tbsp. Corn Starch
  • 1/4 c. Green Onion sliced
  • 1 Tbsp. Sesame Seeds toasted
  • Flour
  • Salt and Pepper
  • Chinese 5 spice
  • 2 Tbsp. Canola oil

Instructions

  • Sauté garlic and ginger but don’t brown add chicken broth, soy sauce and sesame oil.
  • When it comes to a boil add the corn starch which has been mixed with enough cold water to turn it in a liquid and add it to the sauce-whisk to keep from clumping.
  • Salt and pepper cod and dust with flour.
  • Heat canola oil in a sauté pan and sauté cod over a medium heat until done-it is fast.
  • Add broccoli flower to sauce and heat through-pour over prepared fish and serve with rice or Asian noodles.
  • Top with green onions and sesame seeds.

Cod with Snow Peas

Ingredients

  • 1 pkg Coleson’s Catch Cod Fillets thawed
  • 1/4 c Flour
  • 4 Tbsp Canola oil
  • 1/2 c Chicken Broth
  • 1 c Snow Peas
  • 1/4 c Carrot grated
  • 1/4 c Red Bell Pepper sliced
  • 1/4 c Onion diced
  • 1/2 c Water Chestnuts sliced
  • 1 Tbsp garlic chopped
  • 1 Tbsp Ginger grated
  • 2 Tbsp Soy Sauce
  • 1 tsp Sesame Oil
  • 1/2 tsp Sesame Seeds toasted

Instructions

  • In a large sauté pan, sauté the onion in 2 Tbsp. of Canola oil. 
  • When onions turn translucent, add garlic and ginger.
  • Stir to keep the garlic from burning; add chicken broth, peas, carrot, bell pepper, water chestnuts, soy sauce and sesame oil.
  • Simmer until tender, about 2-3 minutes.
  • Dust cod with flour and sauté in 2 Tbsp oil.
  • Top with the vegetable mixture; sprinkle with toasted sesame seeds.

Garlic Crispy Catfish

Ingredients

  • 12 oz pkg package Coleson’s Catch Catfish Fillets cut into strips
  • Salt and Pepper
  • 2 Tbsp garlic chopped
  • 3/4 c Flour
  • Oil to sauté
  • 1/3 c Butter
  • 1 Tbsp garlic chopped
  • 1 Tbsp Parsley chopped

Instructions

  • Toss the catfish strips with the salt, pepper and garlic, and let set for an hour.
  • Heavily coat the strips with flour and sauté.
  • For a dip, melt the butter and lightly sauté the garlic and parsley.

Southwest Catfish with Corn Salsa

Ingredients

  • 1/2 c. tomato juice
  • 1 tsp. Chili Powder
  • 1 tsp. Cumin
  • 2 tsp. Oil
  • 1 tsp. Fennel Seed
  • 1 Tbsp. garlic
  • chiles if desired
  • Corn Salsa:
  • 1 Tomato diced
  • 1/2 Red Onion diced
  • 1/2 Green Bell Pepper
  • 1 tsp. garlic
  • 1/2 c. corn cooked
  • 1 tsp. Chili Powder
  • 1 Tbsp. Vinegar

Instructions

  • Mix all marinade ingredients and marinate catfish for 24 hours.
  • Mix salsa ingredients and chill for 24 hours.
  • Broil or bake the catfish and top with Corn Salsa.
