Tilapia Stuffed Bell Peppers

Ingredients

  • 12 oz pkg Coleson's Catch Tilapia Fillets
  • 1/2 c. Celery diced
  • 2 red bell peppers
  • 1 c. cooked rice (flavored if you have it)
  • 2 Tbsp Basil chopped
  • 1 tsp. garlic chopped 
  • 2/3 c. Onion diced
  • 1 c. Marinara sauce:

Instructions

  • Halve and core the bell peppers. 
  • Dice the Tilapia and toss with remaining ingredients.
  • Fill the bell peppers with rice mixture and place in a glass dish. 
  • Cover and bake at 350 degrees F. for 1 hour.

Notes

If using leftover fish or seafood for this, proceed in the same way--except when cooking, you will only need to heat it through, not actually cook it.

Tilapia With Bok Choy And Water Chestnuts

Servings 2 People

Ingredients

  • 12 oz pkg Coleson's Catch Tilapia Fillets
  • 2 c. Bok Choy chopped (stalks separated from leaf, using both)
  • 1 c. Onion diced
  • 2 tsp. Fresh Ginger grated
  • 1 tsp. garlic chopped
  • 1 tsp. Soy Sauce
  • 1/2 tsp. Sesame Oil
  • 1/2 tsp. Toasted sesame seeds
  • 1/4 c. Carrot grated
  • 2 Tbsp Water Chestnuts chopped
  • Plain oil

Instructions

  • In lightly oiled saute pan, cook the onion and Bok Choy until soft.
  • Add all other non-fish items and saute lightly, leaving the bok choy leaves just wilted.
  • Cook the Tilapia your favorite way and top with the cooked greens.

Notes

Suggested side dishes would be brown rice, bulgur, or quinoa.

Cornmeal Crusted Tilapia with Spicy Tomato Sauce

Servings 2 People

Ingredients

  • 12 oz pkg Coleson's Catch Tilapia Fillets
  • 1/4 c. Milk
  • 1/4 c. corn meal
  • Flour
  • 1/4 tsp. Cumin
  • 1/4 tsp. Chili Powder
  • 1/4 tsp. Garlic Salt
  • 1 c. Tomatoes diced
  • 1/2 c. Yellow Onion diced
  • 1 tsp. garlic chopped
  • 1/2 c. Chicken Stock
  • Canola oil
  • Red Chilies crushed 
  • 2 tsp. Butter
  • Salt and Pepper

Instructions

  • Soak the tilapia fillets in milk for at least an hour. 
  • Sauté onion in canola oil until translucent. 
  • Add the garlic and cook for a bit but don't brown. 
  • Add the tomatoes and broth. 
  • Add approximately 1/4 tsp of each spice and simmer until the liquid is almost gone.
  • Add butter. When melted, adjust seasoning. Set aside.
  • Mix a bit of flour into the corn meal then season with the spices.
  • Take the wet Tilapia and press into the dry mixture, coating it well. Sauté until golden.
  • Top with the spicy tomato sauce and serve with a side salad.

Sole with Sauteed Mushrooms, Lemon and Thyme

Ingredients

  • 12 oz Coleson's Catch Sole Fillets sauteed
  • 2 c. Button Mushrooms sliced
  • 1 tsp. Garlic
  • 1/2 tsp. Thyme
  • 2 Tbsp. butter
  • 1/4 c. white wine
  • 1 Tbsp. lemon juice

Instructions

  • Sauté mushrooms in butter; add garlic and thyme.
  • Cook 2 to 3 minutes.
  • Add other ingredients and simmer 2 to 3 minutes more.
  • Top cooked fish with mushroom mixture.

Sole with Lavender-Rosemary Sauce

Ingredients

  • 1 pkg Coleson's Catch Sole Fillets
  • 1/4 c. Sherry
  • 1 Tbsp. Garlic chopped
  • 1 Tbsp. Shallot or Red Onion chopped
  • 1 c. Heavy Cream
  • 1 tsp. Rosemary
  • 1 tsp. Lavender Blossoms*
  • 1/4 tsp. White Pepper
  • 4 Tbsp. Butter
  • 1 Tbsp. Lemon juice

Instructions

  • Simmer sherry, garlic, and shallot until liquid is almost gone. 
  • Add cream, rosemary, lavender blossoms, and pepper. 
  • Simmer the sauce for approximately 5 minutes then add butter and lemon juice. Simmer until it is the desired thickness.
  • Poach, bake, sauté, or broil the sole; top with sauce.

Notes

Lavender Blossoms can be found in spice section of specialty food stores; they can be substituted with rose petals or any sweet spice like basil.
