Pan Fried Tilapia with Almonds

Servings 2 People

Ingredients

  • 12 oz pkg Coleson's Catch Tilapia Fillets thawed
  • olive oil
  • Lemon Juice
  • Ground Cumin
  • Salt and Pepper
  • Almonds

Instructions

  • Generously coat skillet with olive oil.  Heat over medium heat. 
  • Add the Tilapia so that each piece is flat in the pan (uncovered).
  • Squeeze lemon juice evenly over Tilapia Fillets.  Shake salt and pepper as desired over each piece. 
  • Shake cumin so that each piece is evenly coated.  Cook 4 minutes and then flip each fillet. 
  • Repeat lemon juice, salt & pepper and cumin. 
  • When Tilapia is cooked through, each side should be white and flaky. 
  • With two minutes left, add sliced almonds as desired over each piece. 
  • Place the lid on the skillet (should be the size that covers all of the Tilapia). 
  • Let steam for the last 2 minutes of cooking.
  • Uncover and with a spatula, transfer to plates.

Notes

Serve with rice, a vegetable and/or salad.

Baked Tilapia with Pecans and Maple

Ingredients

  • 12 oz pkg Coleson's Catch Tilapia Fillets
  • 1/2 c. pecans chopped
  • 1/3 c. Maple Syrup
  • 1/4 c. Butter melted
  • Salt and Pepper

Instructions

  • Season the Tilapia fillets with salt and pepper, brush with some butter and press the pecans on top. 
  • Place Tilapia in a baking dish.
  • Drizzle with the syrup and the rest of the butter. 
  • Bake at 450° for 10-15 minutes.

Tilapia with Asparagus and Shitake Mushrooms

Ingredients

  • 12 oz pkg Coleson's Catch Tilapia Fillets thawed, seasoned with salt and pepper
  • 1 c. Asparagus cut nicely on the diagonal 
  • 1/2 c. Shitake Mushrooms thinly sliced
  • 1/4 c. Red Onion diced
  • 1/2 c. Yellow Bell Pepper diced
  • 1 Tbsp garlic chopped 
  • 1/3 c. Chicken Broth
  • Salt and Pepper

Instructions

  • In a sauce pan bring the chicken broth, garlic, pepper, onion and mushrooms to a boil, add the asparagus and Tilapia, cover and simmer for 5 minutes.
  • Serve with a salad or with rice.

Tilapia with Peach and Cherry Salsa

Servings 2 People

Ingredients

  • 12 oz pkg Coleson's Catch Tilapia Fillets
  • 1/2 c. Peaches peeled & diced 
  • 1/3 c. Cherries diced 
  • 2 Tbsp Red Onion diced
  • 2 Tbsp Mint chopped 
  • 1 tsp. Jalapeno Pepper diced 
  • The juice of 1 lime
  • Salt and Pepper

Instructions

  • Cook the Tilapia any style.
  • Mix the other ingredients and serve with the Tilapia.
  • This type of salsa does not last; make only enough for the time of serving. I prefer a tiny dice in this recipe.

Ingredients

  • 12 oz pkg Coleson's Catch Tilapia Fillets
  • 1/2 c. Chicken Broth
  • 1/4 c. Green Pimento Stuffed Olives sliced
  • 1 tsp. garlic chopped
  • 1 Tbsp Basil chopped
  • 2/3 c. Artichoke Hearts quartered (if using fresh, steam first)

Instructions

  • Put all ingredients in a saute pan and simmer for 30 minutes.
