Pumpkin Stew With Mahi-Mahi

Servings 2 People

Ingredients

  • 1 pkg Coleson's Catch Mahi-Mahi trimmed of skin and  diced into medium pieces
  • 1/2 c Onion diced 
  • 1/2 c Celery diced
  • 3 c Chicken Broth
  • 1/2 tsp Thyme
  • 2 bay leaves
  • 1 c Pumpkin peeled and diced 

Instructions

  • Simmer the ingredients except the Mahi-Mahi until tender.
  • Add the Mahi-Mahi at the end and simmer for 3 more minutes.
  • Adjust seasoning to taste.

Notes

If you want a chunky, brothy stew, add the pumpkin near the end of the cooking. If you want the pumpkin to dissolve and act as a thickener, cook the pumpkin from the beginning.

Baked Red Snapper with Pumpkin

Ingredients

  • 2 lbs. Coleson's Catch Red Snapper Fillets salt and pepper
  • 3 c. Fresh Pumpkin peeled and diced
  • 1/2 c. Onion diced
  • 1/2 c. Celery diced
  • 1/2 c. dry sherry
  • 1/2 tsp. Allspice
  • 3 bay leaves
  • 2 Tbsp. Oil
  • 1/2 c. Chicken stock or water

Instructions

  • Sauté the onion and celery in the oil.  Add the sherry, allspice and bay leaves.  Simmer for 2 minutes. 
  • Add the chicken stock and bring to a boil.  Salt and pepper to taste. 
  • Place the seasoned snapper fillets in a greased, glass baking dish and put the pumpkin on top. 
  • Pour the sautéed mixture over the fish and pumpkin and cover. 
  • Bake for 20 minutes at 400°. Serve with rice.

Notes

This delicious, healthy and easy to prepare recipe is also excellent for other Coleson's Catch® seafood items like Halibut, Tuna, Mahi-Mahi, Chilean Sea Bass, Swordfish, Orange Roughy and Tilapia. Enjoy!

Cod Fillets with Turnips and Greens

Ingredients

  • 1 pkg Coleson’s Catch Cod Fillets thawed
  • 1 bunch Fresh turnips with greens smaller turnips are better
  • 1/2 c. Carrot diced
  • 4 strips Bacon
  • 1/2 c. Red Onion diced
  • 1 Tbsp. garlic
  • 1/2 c. Chicken Broth
  • 2 bay leaves
  • 2 Tbsp. balsamic vinegar
  • 1/2 tsp. Thyme fresh if possible
  • Salt and Pepper

Instructions

  • If the turnips are small, cut off the top and cut into quarters, if bigger, dice them. Wash the leaves and chop.
  • Use 1 cup of turnip and 1 cup of the greens. 
  • Sauté bacon, remove from the fat.
  • Sauté onions in bacon grease until translucent.
  • Add the garlic and sauté lightly, don’t brown. 
  • Add the broth, root vegetables, thyme and bay leaves.
  • Cover and simmer until the vegetables are al dente.
  • Add the greens and cod, cover and steam for 3-5 minutes (depending on thickness of cod, but it is usually thin).
  • Remove cod and place in a serving dish.
  • Pour the mixture over the cod.
  • Top with the crumbled bacon and balsamic vinegar.
  • I don’t think it needs a side dish but you want one perhaps a baked potato.

Whole Catfish with Sage and Onions

Ingredients

  • 1 diced Onion
  • 2 Tbsp. fresh sage or 1 tsp. dry sage chopped
  • 1/2 c. Celery diced
  • 4 bay leaves
  • 1/2 c. White wine or chicken stock

Instructions

  • Mix all the ingredients.
  • Place the catfish on top of aluminum foil wrap; pour the mixture inside the body cavity and on top of the fish.
  • Seal the foil wrap and bake for 15 minutes at 350°.

  • 12 oz. catfish fillets
  • Sauce:
  • 3 c. Fresh or canned tomatoes
  • 1 c. Onions diced
  • 1 tsp. Thyme
  • 2 bay leaves
  • 1 tsp. Salt
  • 1 c. fresh or frozen sliced okra
  • 1/2 c. slice Andouille sausage

Instructions

  • Simmer Sauce ingredients for 20 minutes.
  • Place Catfish in a casserole dish.
  • Cover with sauce and bake for 20 to 30 minutes in a 350° oven.
