
Pumpkin Stew With Mahi-Mahi
Servings 2 People
Ingredients
- 1 pkg Coleson's Catch Mahi-Mahi trimmed of skin and diced into medium pieces
- 1/2 c Onion diced
- 1/2 c Celery diced
- 3 c Chicken Broth
- 1/2 tsp Thyme
- 2 bay leaves
- 1 c Pumpkin peeled and diced
Instructions
- Simmer the ingredients except the Mahi-Mahi until tender.
- Add the Mahi-Mahi at the end and simmer for 3 more minutes.
- Adjust seasoning to taste.
Notes
If you want a chunky, brothy stew, add the pumpkin near the end of the cooking. If you want the pumpkin to dissolve and act as a thickener, cook the pumpkin from the beginning.
