Catfish with Tomatoes and Okra
Servings 2 People
- 12 oz. catfish fillets
- 3 c. Fresh or canned tomatoes
- 1 c. Onions diced
- 1 tsp. Thyme
- 2 bay leaves
- 1 tsp. Salt
- 1 c. fresh or frozen sliced okra
- 1/2 c. slice Andouille sausage
- Simmer Sauce ingredients for 20 minutes.
- Place Catfish in a casserole dish.
- Cover with sauce and bake for 20 to 30 minutes in a 350° oven.
