Flounder with Grapefruit and Mint

Ingredients

  • 12 oz pkg Coleson's Catch Flounder Fillets Marinade:
  • 1/2 c. fresh pink grapefruit juice
  • 1 tsp. grapefruit zest chopped
  • 1 Tbsp Shallots chopped
  • 1/4 c. mint leaves chopped
  • 1/4 tsp. Salt and Pepper

Instructions

  • Mix marinade ingredients.
  • Marinate flounder for at least one hour, turning occasionally. Grill.
  • Garnish with fresh pink grapefruit sections and chopped mint.

Lasagna-style Flounder Sans Pasta

Ingredients

  • 1.5 lbs. Coleson's Catch Flounder
  • 2-3 c. Marinara sauce:
  • 1-2 c. Ricotta cheese 
  • 1-2 eggs Use 1 egg for each cup of ricotta
  • 4 tsp chopped fresh basil or 1 tsp Dried
  • 2 tsp Fresh Chopped Garlic or 1/2 tsp Garlic Salt
  • 2 c. Mozzarella Cheese Grated
  • 2 Tbsp Fresh parsley Chopped

Instructions

  • Mix the ricotta, egg(s), basil and garlic.
  • In a square glass dish layer small amounts of marinara, fish, ricotta, cheese and a layer of sauce.
  • Repeat, finishing with a layer of mozzarella cheese.
  • Bake covered at 350 degrees F. for 40-50 minutes, then bake uncovered another 10 minutes.
  • Sprinkle with parsley.

Notes

If you have a favorite commercial marinara...use it. If you like to make your own - go ahead. How much sauce and ricotta you need will be determined by how wet and how ricotta-rich you like it. I'm a heavy-sauce, light-cheese gal, myself.

Flounder with Radish and Turnips

Servings 2 People

Ingredients

  • 12 oz pkg Coleson’s Catch Flounder Fillets
  • 3/4 c. Radishes sliced
  • 3/4 c. turnips sliced
  • 3/4 c. shredded turnip greens (if you can get them; if not substitute another green or eliminate)
  • 3/4 c. Yellow Onion diced
  • Butter
  • 1/2 c. Chicken Broth
  • Splash of Balsamic vinegar

Instructions

  • Season the flounder and dust with flour.
  • Sauté in butter until golden and set aside.
  • Sauté the onion until tender.
  • Add the turnips and radishes and cook until tender.
  • Add the greens and broth.
  • Cover and cook just to wilt greens.
  • Hit with a splash of balsamic vinegar, adjust seasoning, and pour over fish.
  • Serve with any grain.

Ingredients

  • 12 oz pkg Coleson’s Catch Flounder Fillets
  • 4 oz. plain goat cheese
  • 4 oz. cream cheese
  • 1/3 c. chopped olives your choice-strong-flavored ones work well
  • 1/3 c. Red Onion finely diced
  • Black Pepper
  • 1 c. sliced mushroom your choice
  • 1/2 c. Yellow Onion diced
  • A bit of butter
  • 1/2 c. dry white wine
  • 3 Tbsp fresh chopped parsley

Instructions

  • Mix the cheeses, olives, red onion, and pepper until smooth and spreadable.
  • Place an equal amount of the cheese mixture on the tail end of each piece of fish.
  • Roll up like a sleeping bag and place in a square glass casserole dish; set the dish aside.
  • Sauté the mushrooms and yellow onions and pour over the fish, top with wine and parsley.
  • Cover and bake at 350 degrees F for 30-40 minutes depending how fat the rolls are.
  • Serve with any grain.

Codfish Cakes with Bacon Cream Sauce

Ingredients

  • 12 oz cooked codfish fillets (recommend poach or steam)
  • 1/2 c. Bread Crumbs
  • 1/2 c. Béchamel cooled (see below)
  • 1/2 tsp. Allspice
  • 1/2 c. Toasted Pecans finely chopped
  • Béchamel
  • 1 1/2 c. Half and half
  • 1 Tbsp. Shallots
  • 1 tsp. Allspice
  • 1/2 c. Chicken Stock

Instructions

  • Flake fish. Mix with other ingredients and shape into 3" rounds 2/3" thick. Coat with bread crumbs.
  • Béchamel: Simmer; thicken with roux. Use 1/2 c. sauce to make Codfish cakes.
  • Use the rest as sauce to pour over.
  • Recommend adding chopped bacon to sauce before serving.
