Mussels With Coconut and Red Onion

Ingredients

  • 1 pkg Coleson's Catch Mussels on Half Shell
  • 1/3 c Coconut Butter
  • 1/4 c Toasted Coconut
  • 2 Tbsp Minced Red Onion
  • 1/4 tsp Black Pepper
  • 1-2 tsp Lime Juice

Instructions

  • Mix all ingredients and place spoonfuls on top of the mussel meat.
  • Place on a ready grill and heat until the mussel meat is warmed through (10 plus minutes).

Notes

Other Combination you can try on the Mussels on the Half Shell:
  • Blue cheese, Bacon and Sauteed Onion
  • Bacon, Sauteed Onion, Barbeque sauce and Cheddar Cheese
  • Bacon, Sauteed Onion, Jalapeno, Cheddar Cheese
  • Sauteed Onions, Bourbon, Bacon, Black Pepper and Cheddar Cheese Salted Butter, Toasted Almonds, Lemon and Chopped Parsley

Ingredients

  • 1 pkg Coleson's Catch Mussels on Half Shell
  • 1/2 c Diced Cooked Bacon
  • 1/2 c sautwed Onion
  • 2 Tbsp chopped basil
  • 2/3 c Mozzarella
  • 1/2 c Tomatoes diced
  • 1/2 c Avocado diced

Instructions

  • Toss bacon, onion and basil and place on top of the mussel meat.
  • Top with mozzarella and place on a ready grill.
  • Remove when the cheese is melted and the mussel is heated through (10 plus minutes).
  • Top with the tomatoes and avocado.

Grilled Mussels With Blue Cheese and Walnuts

Ingredients

  • 1 pkg Coleson's Catch Mussels on Half Shell
  • 1/2 c crumbled blue cheese
  • 1 Tbsp balsamic vinegar
  • 1/2 c Chopped Walnuts
  • 1 Tbsp minced shallots
  • 1/4 tsp Black Pepper

Instructions

  • Toss all the ingredients together (except the mussels) and place a couple of spoons of the mixture on top of the mussel.
  • Place on a ready grill until the cheese is melted--remember that blue cheese really doesn't melt that much, but you want to make sure the mussel meat is warm through (10 plus minutes).

Mussels on the Half Shell with Corn, Mint and Red Bell Pepper

Ingredients

  • 12 pcs Coleson's Catch Kono Mussels on the Half Shell
  • 1/2 c cooked corn
  • 1/2 c Red Bell Pepper Diced
  • 2 Tbsp chopped mint
  • 2 Tbsp Diced Shallot
  • 2 Tbsp Lime Juice
  • 1 tsp olive oil
  • Salt and Pepper

Instructions

  • Toss everything together except the Mussels.
  • Top each mussel with a heaping of the mixture.
  • Warm either on a sheet pan in the oven or over an open flame - heating until warmed through, about 10-15 minutes.

Serving Suggestions: Serve as a starter or as main course with a tossed salad.

  • 12 pcs Coleson's Catch Kono Mussels on the Half Shell
  • 1 c Diced Apricot
  • 2 Tbsp grated fresh ginger
  • 2 Tbsp Diced Green Onion
  • 1 Tbsp Soy Sauce
  • 1 Tbsp Sesame Oil
  • 2 Tbsp Toasted sesame seeds
  • Salt and Pepper

Instructions

  • Toss everything together except the Mussels.
  • Top the mussels with the mixture.
  • Heat either in the oven on a sheet pan or on an open flame.
  • Heat until warmed through-10-15 minutes.

Notes

Serve as a starter or a main course with tossed salad.
