Poached Tilapia

Ingredients

  • 12 oz pkg Coleson's Catch Tilapia Fillets
  • 1 c. water
  • 1 Tbsp Pickling spice
  • 1/2 c. Onion diced
  • 1 Tbsp Lemon Juice
  • Salt

Instructions

  • In a large bottom pan, (enough to accommodate the fillets side by side) boil the water with the onion, lemon and seasonings. 
  • Add the fillets and simmer for 4-6 minutes depending on thickness. 
  • Remove and cool.

Notes

The broth can be saved for future poaching or used to make soup.

Baked Tilapia Fillets with Grated Sweet Potato

Ingredients

  • 12 oz pkg Coleson's Catch Tilapia Fillets
  • 1 Sweet Potato peeled and grated
  • 2 Tbsp Fresh Ginger grated
  • 1/4 c. Green Onion chopped
  • 1/2 c. Flour
  • Salt and Pepper

Instructions

  • Season the fish with salt and pepper. 
  • Toss other ingredients and press on top of the filets.
  • Place in a baking dish and bake at 400 for 20 minutes or until sweet potatoes are tender.

Simple Sailor's Pie with Tilapia

Ingredients

  • 12 oz pkg Coleson's Catch Tilapia Fillets thawed and diced
  • 2 c. Mashed Potatoes
  • 1/2 c. Roasted Tomatoes diced
  • 1/2 c. Sauteed Mushrooms sliced
  • Salt & Pepper

Instructions

  • Toss the Tilapia (seasoned with salt and pepper), tomatoes and mushrooms together. 
  • Place in a clear baking dish (to see doneness of fish) covering the bottom. 
  • Spread the mashed potatoes on top of the mixture and bake at 350 degrees for 30 minutes or until the fish is cooked and the potatoes are browned.
  • Serve with Garlic Bread and Salad.

Tilapia with Asparagus and Shitake Mushrooms

Ingredients

  • 12 oz pkg Coleson's Catch Tilapia Fillets thawed, seasoned with salt and pepper
  • 1 c. Asparagus cut nicely on the diagonal 
  • 1/2 c. Shitake Mushrooms thinly sliced
  • 1/4 c. Red Onion diced
  • 1/2 c. Yellow Bell Pepper diced
  • 1 Tbsp garlic chopped 
  • 1/3 c. Chicken Broth
  • Salt and Pepper

Instructions

  • In a sauce pan bring the chicken broth, garlic, pepper, onion and mushrooms to a boil, add the asparagus and Tilapia, cover and simmer for 5 minutes.
  • Serve with a salad or with rice.

Tilapia Fish Tacos

Servings 2 People

Ingredients

  • 12 oz pkg Coleson's Catch Tilapia thawed
  • Marinade #1 
  • 2 tsp. Chili Powder
  • 1 tsp. garlic chopped
  • 1 Tbsp Lemon Juice
  • 1 tsp. Italian seasoning
  • Salt and pepper Marinade #2
  • 2 tsp. Cajun seasoning*
  • 1 tsp. garlic chopped
  • 1 Tbsp Lime Juice
  • Salt and Pepper

Instructions

  • Since the Tilapia has a nice flavor on its own you can just season it with lemon, garlic, salt and pepper and the flavor is great.
  • If you want a big bold flavor try the chili-powder or Cajun marinades.
  • With the bolder marinades, I find I don't need salsa, just vegetables and cheese.
  • I like to marinate the fish for at least 8 hours, bake the fish fillets whole, and then cut them after they are cooked.
  • Serve the tacos with your favorite garnishes.
