Basic Savory Polenta--Creamy, Sautéed and Deluxe

Ingredients

  • 2 c. Chicken Broth
  • 1 Tbsp garlic chopped
  • 1 tsp Italian seasoning
  • 2 Tbsp fresh basil chopped
  • Salt and Pepper
  • 1 c cornmeal
  • Half and half

Instructions

  • In a heavy saucepan bring all the ingredients except half and half to a boil.
  • Simmer for approximately 10 minutes or until the cornmeal is smooth and not gritty. Stir frequently.
  • Add half and half to achieve the desired creaminess.
  • It will get thicker as it cools so I make mine a little thinner so it doesn't get gummy half way through eating.

Notes

Sauteed: Use the same process as above but don't thin it as much and spread in an oiled sheet pan to cool. Spread with oil on top as well to prevent cracking. Once cool, cut into desired shapes and saute in hot oil until brown and crispy.
Deluxe: Same process as above, with the addition of 1 c. finely diced sautéed vegetables such as onions, celery, carrots, cabbage, etc.

Ingredients

  • Chilled Flavored Coffee: 
  • 1 c flavored coffee concentrate
  • 1 c milk
  • sweeten to taste
  • Mocha:
  • 1 c coffee concentrate
  • 1 c chocolate milk
  • flavoring
  • If using regular coffee:
  • 1 c coffee concentrate
  • 1 c milk
  • 1/4 tsp vanilla
  • 1/4 tsp preferred flavoring (raspberry almond, mint, etc)

Instructions

  • I start with a premium flavored ground coffee. I brew it triple strength and chill.
  • Once the concentrate is on hand, it is easy.
  • If you start with non-flavored coffee you will need flavor extracts.
  • Choose a combination above.
  • I use 1% milk and artificial sweetener to finish the beverage.
  • If calories are not a concern, use any dairy and sweetener; half and half or heavy cream, sugar or honey.

  • Assemble a tray of your favorite finger dessert snack at least one chocolate and one not. Depending on your crowd this may be a token tray or an important highlight. Some people only remember the dessert others won't even notice it. You make the call.

  • A minimum of two brewed ice teas are needed: A plain black tea and a "sport" tea (fruity). Go crazy if you like and do mint, green, etc. I like to have fresh mint, lemon and at least one syrup: vanilla, caramel, mint, etc.

Scallops with Cranberry, Orange and Basil

Course Appetizer
Servings 2 People

Ingredients

  • 12 oz Coleson’s Catch Scallops
  • Marinade:
  • 1/2 c cranberry juice
  • 1/4 c Lemon Juice
  • 1 tbsp Orange Zest
  • 2 Tbsp fresh chopped basil
  • 1/2 c diced red onion
  • 1/4 tsp Salt and Pepper

Instructions

  • Marinate for 24 hours. Garnish with diced celery and orange and shredded ice burg lettuce.

Notes

Serve with sweet baguette.
