Poached Perch Salad

Poached Perch Salad

Servings 2 People

Ingredients

  • 1 pkg Coleson's Catch Perch fillets
  • 1/2 c. White Wine
  • 1 tsp. garlic
  • 1/4 tsp. Salt
  • Lettuce   shredded
  • Cucumber Yogurt Dressing:
  • 1 Cucumber seeded and peeled
  • 1 c. Yogurt 
  • 1 Tbsp. garlic chopped
  • 1 Tbsp. Mint chopped
  • Kalamata Olives
  • 1 tsp. Salt and Pepper

Instructions

  • Poach the perch in the wine, garlic, and salt.  Watch carefully as it will cook quickly. Chill.
  • Blend all Cucumber Yogurt Dressing ingredients.  Chill.
  • Serve on a bed of shredded lettuce and top with dressing. 
  • Garnish with Kalamata olives.

Red Snapper Tacos

Servings 2 People

Ingredients

  • 1 pkg Coleson's Catch Red Snapper Fillets
  • 1/2 tsp. Cumin
  • 1/2 tsp. Paprika
  • 1 tsp. garlic chopped
  • Salt and Pepper
  • Flour
  • Corn or Flour Tortillas
  • Taco Fixings:
  • Shredded lettuce
  • diced tomatoes
  • diced onions
  • Grated Cheese
  • salsa
  • Guacamole 
  • Sour Cream

Instructions

  • Crispy Red Snapper Style Tacos:
  • Cut snapper into thin strips and toss with the seasonings. Dust with flour and quick cook in hot oil for a few minutes.
  • Baked Red Snapper Tacos:
  • Cut snapper into thin strips and toss with the seasonings. Spread onto a sheet pan and bake at 450° for 5 minutes.

Notes

Serve with your favorite taco fixings combination.

Baked Red Snapper with Squash and Red Onion

Ingredients

  • 1 pkg Coleson's Catch Red Snapper Fillets
  • 2 c. Squash (Zucchini yellow, summer), thinly sliced
  • 1/2 c. Red Onion diced
  • 1 tsp. garlic chopped
  • 1 Tbsp olive oil
  • Salt and Pepper

Instructions

  • Place the squash and onions in a baking dish, season with salt and pepper and toss with half the oil.
  • Place the fish on top, seasoned with salt and pepper and sprinkle with the garlic and the rest of the oil.
  • Cover with foil and bake at 400° for 20 minutes.
  • Good with rice or a salad.

Orange Roughy with Beets

Orange Roughy with Beets

Servings 2 People

Ingredients

  • 1 pkg Coleson’s Catch Orange Roughy
  • Salt and Pepper
  • Flour for dusting
  • 2 c. diced beets cooked (Can use canned—but NOT pickled)
  • 1/2 c. diced onion
  • Butter
  • Oil

Instructions

  • Sauté onions in butter until translucent.  Add the beets, salt, and pepper. 
  • Continue to cook until the beets are warmed through.  There should be enough butter so it is a little saucy.  If it starts to look oily add a little water. 
  • Season and dust the Orange Roughy Fillet in flour and sauté in hot oil for a couple of minutes on each side, until golden brown.
  • Top with beets.

Notes

Serve with a salad. Additional Comments: In my circle, beets are making a comeback. Why not?

Orange Roughy with Short-Cut Ratatouille

Servings 2 People

Ingredients

  • 1 pkg Coleson’s Catch Orange Roughy
  • 2 c. Eggplant Onion, Tomatoes, Squash (yellow and green), diced
  • 1/4 c. Basil chopped
  • 2 Tbsp garlic chopped 
  • 1/2 c. Chicken Broth
  • Salt and Pepper

Instructions

  • To prepare the ratatouille, just throw ingredients in a pot and simmer until tender.
  • Dust the Roughy with flour and sauté until crispy, then top with the ratatouille mixture.

Notes

You can cook the fish with the ratatouille or cook it separately. All at once is easier and quicker. A small dice is better--it cooks faster; and if the tomatoes are finely diced, you really don't need to peel them.
