Minted Cantaloupe

Servings 2 People

Ingredients

  • 2 c Ripe Cantaloupe diced
  • 2 Tbsp Lime Juice
  • 2 Tbsp Mint chopped

Instructions

  • Mix ingredients and chill for 4 plus hours.

Notes

This is a great snack or dessert.

Wild Rice and Pomegranate Salad

Course Salad
Servings 2 People

Ingredients

  • 2 c cooked wild rice or wild rice/white rice blend cooled
  • 1/2 c Celery diced
  • 1/2 c Red Onion diced
  • 1 c pomegranate kernels 
  • 1/4 c Mint diced
  • 1/4 c Honey
  • 1/4 c white wine vinegar
  • 1/3 c bland oil (canola vegetable)
  • Salt and Pepper

Instructions

  • Mix the honey, vinegar, oil, salt and pepper and toss with the other ingredients, chill.

Lime and Orange Cucumbers

Servings 2 People

Ingredients

  • 2 c cucumbers peeled, seeded, and cut into crescents
  • Juice of one Lime
  • Juice of one Orange
  • 1/4 tsp Orange Zest
  • 1 tsp Red Onion or Shallot minced 
  • 1 Tbsp Mint chopped 

Instructions

  • Marinate everything for 24 hours.

Notes

Use on salads or as a salsa on grilled items.  It's great with tuna.

Prawns in Coconut Milk

Prawns in Coconut Milk

Course Appetizer
Servings 2 People

Ingredients

  • 12 pcs Coleson's Catch Raw Black Tiger Prawns 16/20 peeled & seasoned with salt and pepper
  • 1/2 c Red Onions diced
  • 1 Tbsp coconut oil
  • 2 Tbsp Mint chopped
  • 2 Tbsp Basil chopped
  • Juice and zest of one lime
  • 1/2 c Coconut Milk
  • 1/2 tsp Red Chili Flakes crushed

Instructions

  • Sauté the onion in the oil.
  • Add all ingredients except prawns and simmer for a few minutes.
  • Add the prawns and simmer until the prawns are cooked, just a few minutes.

Notes

Serve with white rice.

Tuna with Grapefruit Marinade

Servings 2 People

Ingredients

  • 12 oz Coleson’s Catch Tuna Steaks
  • 1/4 c Yellow Grapefruit Juice
  • 1 tsp Shallots minced
  • 1 Tbsp Mint chopped
  • Pinch Black Pepper
  • Salt
  • olive oil

Instructions

  • Marinate tuna in grapefruit juice, shallots, mint and pepper for at least an hour.
  • Sprinkle with salt and brush with oil; cook over an open flame or in a hot oven or broiler.
