Tuna Satay with Peanut Sauce

Tuna Satay with Peanut Sauce

Servings 2 People

Ingredients

  • 12 oz pkg Coleson’s Catch Tuna Steaks
  • 1/2 c Onion halved and sliced
  • 1/2 c Red Bell Pepper halved and sliced
  • 2/3 c Chicken Broth
  • 1/3 c Onion diced
  • Skewers
  • 3 Tbsp Chunky Peanut Butter
  • 1/2 tsp crushed red chili flakes
  • 1 tsp Lemon Juice
  • 1/4 tsp Black Pepper
  • 3 Tbsp Peanuts chopped
  • 1 Tbsp Parsley chopped

Instructions

  • Cut tuna into one-inch squares and put them on the skewers; put in fridge.
  • In a medium-sized pan, saute the sliced onions and bell peppers al dente; set aside.
  • In a small saucepan, saute the diced onion until clear, then add chicken broth.
  • When it comes to a boil, add the peanut butter and crushed chili; whisk smooth.
  • When it comes to another boil, add lemon and pepper; simmer 2 minutes.
  • To cook the tuna: char rare over an open flame, saute, or broil - whichever way you choose, just don't overcook it.

Notes

To serve, lay the cooked tuna on a bed of rice or bulgur wheat, pour the sauce over the tuna, then sprinkle with bell pepper and chopped peanuts, finishing with parsley.

Cajun Swordfish with Cajun Tartar Sauce

Ingredients

  • 12 oz Coleson's Catch Swordfish Steaks
  • 1/4 c. Cajun seasoning*
  • Cajun Tartar Sauce:
  • 2/3 c. Mayonnaise
  • 2 Tbsp. finely diced onion
  • 2 Tbsp. diced celery
  • 1 Tbsp. chopped capers
  • 2 Tbsp. pickle relish
  • 1 Tbsp. Lemon Juice
  • 1 Tbsp. Cajun seasoning*

Instructions

  • Dust Swordfish with Cajun seasoning and sauté.
  • Top with Cajun Tartar Sauce, fresh diced tomatoes, and chopped parsley.

Couscous Salad I

Ingredients

  • 2 c cooked couscous prepared per package instructions
  • 1/4 c Lemon Juice
  • 1/2 c olive oil
  • 1/4 c chopped mint
  • 1/3 c Cucumber diced
  • 1/3 c Red Onion diced
  • 1/3 c Red Bell Pepper diced
  • 1/2 tsp crushed red chilies 
  • Salt and Pepper

Instructions

  • Combine all ingredients in a bowl and chill overnight.

Notes

Serving suggestions:
As garnish to other dishes like hummus in pita pocket, or as an accompaniment to cold poached salmon, halibut, scallops or calamari steaks, as well as cold broiled swordfish steak.

Croquettes

Croquettes

Servings 2 People

Ingredients

  • 2 c cold mashed potatoes
  • 1 c cooked Coleson's Catch salmon flaked (leftovers are great)
  • 2 Tbsp chopped fresh dill
  • 1/4 c chopped red onion
  • 1 tsp lemon juice
  • 1 c Panko bread crumbs Japanese bread crumbs

Instructions

  • Toss the flaked salmon with the dill, onion and lemon.
  • Put the mashed potatoes in a bowl and with a spoon stir them until soft and smooth.
  • Fold in the salmon and shape into patties approximately 1/2 inch thick and 3 inches wide.
  • Press them into the panko and chill.
  • To cook, sauté in canola oil until warmed through and golden brown.
  • Can be served with tartar sauce or a warm white wine butter sauce.

Notes

A perfect use for left-over mashed potatoes. Croquettes typically have a base of mashed potatoes and then are enhanced with seasoning and a protein, shaped and rolled in breadcrumbs, then deep-fried. Common shapes are "log shape" (1 inch wide, 3 inches long) and pear shaped. I have chosen to use the same mixture but to shape them into "patties." This way I don't have to deep-fry them but can sauté them. They can be used as an appetizer or an entrée.

Salmon Wrap

Servings 2 People

Ingredients

  • 1 c cooked Coleson's Catch Salmon Fillets
  • 1 c goat cheese
  • 1/2 c finely diced red onion
  • 2 Tbsp toasted poppy seeds
  • 1/4 c Lemon Juice
  • 2 Tbsp chopped dill
  • Salt and Pepper
  • Sprouts
  • Tomatoes Diced
  • 4 Green tortillas  spinach

Instructions

  • Mix the ingredients (except goat cheese) in a processor or a mixer.

Notes

Thinly spread over the whole tortilla, and then add a layer of shredded lettuce or sprouts, and diced tomatoes. Then you roll it up really tight and cover it with a damp towel for a few hours. Slice the salmon wrap right before serving.
